About this dish

Dilli Ki Fried Aloo Chaat is the soul of Delhi street food, particularly famous in the lanes of Karol Bagh and Old Delhi. Unlike other chaats, this is all about the 'karara' (extra crispy) texture of the potatoes, achieved by double-frying. It is tossed in a specialized 'Chaat Masala' that balances salt, spice, and tang perfectly.

Ingredients

The Potatoes

  • 600g (4 large) Potatoes, peeled and cut into 1-inch cubes
  • Oil for deep frying
  • Chilled water for soaking

The Spice Mix

  • 2 tsp Chaat Masala
  • 1 tsp Roasted Cumin (Bhuna Jeera) powder
  • 1/2 tsp Black Salt (Kala Namak)
  • 1/2 tsp Red Chili powder (Degi Mirch)
  • 1/4 tsp Dried Ginger powder (Saunth)

The Finish

  • 2 tbsp Lemon juice
  • 2 tbsp Fresh Mint Chutney (spicy)
  • 1 tbsp Ginger juliennes
  • Fresh coriander for garnish

Method

    Prep the Potatoes

    After cubing the potatoes, soak them in chilled water for 15 minutes. This removes excess starch, which is the secret to getting them truly crispy and preventing them from sticking together.

    Drain and Dry

    Drain the potatoes and pat them completely dry with a kitchen towel. Any moisture left on the surface will cause the oil to splatter and result in soggy potatoes.

    First Fry (Blanching)

    Heat oil to medium heat (approx 160°C). Fry the potato cubes in batches until they are cooked through and tender, but not yet browned. This should take about 5-6 minutes. Remove and drain on paper towels.

    Rest the Potatoes

    Let the par-fried potatoes rest for at least 10 minutes. This resting period allows the moisture to stabilize, setting the stage for the final crisping fry.

    Second Fry (Crisping)

    Increase the oil temperature to high (approx 190°C). Flash-fry the rested potatoes until they turn a deep golden brown and the exterior becomes audible when tapped with a spoon. This takes about 2-3 minutes.

    Drain Excess Oil

    Lift the potatoes out of the oil using a slotted spoon and place them in a large mixing bowl immediately. Do not drain on paper towels this time, as the slight residual oil helps the spices stick.

    The Spice Toss

    While the potatoes are piping hot, sprinkle the combined dry spice mix over them. Toss vigorously so every cube is evenly coated in the masala blend.

    Final Tempering

    Drizzle the lemon juice and mint chutney over the spiced potatoes. Add the ginger juliennes and chopped coriander. Give it one final quick toss.

    Serve Immediately

    Serve in a plate or traditional leaf bowl (dona) with toothpicks. Fried aloo chaat must be eaten within minutes, as the lemon juice will eventually soften the crisp exterior.

Notes & variations

  • Use 'Pahadi' or starchy potatoes rather than waxy new potatoes for the best crunch.
  • You can air-fry the potatoes at 200°C for 20 mins for a healthier version, though the texture differs.
  • Pre-mix the spices beforehand so you can toss them while the potatoes are at peak heat.
  • If you don't have mint chutney, use extra lemon and finely chopped green chilies.

Serve as a standalone snack, ideally with a side of sweet tamarind chutney if you prefer a sweet-tangy balance.

Prick the potato cubes with a fork before frying to allow the spices to penetrate deep into the center.
