About this dish

A true delicacy from the narrow food lanes of Amritsar, Maghaz Masala (Brain Fry) is a testament to the city's love for offal. The texture is incredibly delicate, almost custard-like, requiring a gentle hand during cooking. It is a high-protein, rich breakfast or snack usually prepared at specialized street-side stalls where the tawa (griddle) is never cold.

Ingredients

Cleaning & Pre-prep

  • 2 sets Goat Brain (Maghaz), very fresh
  • 500ml Water
  • 1/2 tsp Turmeric Powder
  • 1 tsp Vinegar or Lemon Juice

The Masala Base

  • 3 tbsp Ghee
  • 2 medium Onions, very finely chopped
  • 1 tbsp Ginger-Garlic Paste
  • 2 large Tomatoes, finely chopped
  • 2 Green Chillies, chopped

Spices & Herbs

  • 1/2 tsp Cumin Seeds
  • 1 tsp Kashmiri Red Chilli Powder
  • 1/2 tsp Turmeric Powder
  • 1 tsp Coriander Powder
  • 1/2 tsp Garam Masala
  • 1 tsp Dried Fenugreek Leaves (Kasuri Methi)
  • Fresh Coriander for garnish

Method

    Clean the Brain

    Soak the brain in water with turmeric and vinegar for 10 minutes. Gently remove the thin outer membrane and visible veins using your fingers; this is tedious but crucial for a clean taste and smooth texture.

    Blanching

    Bring a pot of water to a boil, drop the cleaned brain in for exactly 2-3 minutes to firm it up slightly, then drain and chop into 1-inch chunks. Do not over-boil or it will turn rubbery.

    The Ghee Base

    Heat ghee in a wide pan or flat tawa. Add cumin seeds and let them crackle. Add the onions and sauté until they are translucent and just beginning to brown at the edges.

    Aromatic Paste

    Add the ginger-garlic paste and green chillies. Sauté for 2 minutes on medium heat until the raw pungent aroma is replaced by a sweet, toasted smell.

    Tomato Reduction

    Add the chopped tomatoes and salt. Cook until the tomatoes break down completely and the oil starts to ooze from the masala. Use your spatula to mash the tomatoes into a smooth paste.

    Spice Infusion

    Add red chilli powder, turmeric, and coriander powder. Sauté for 1 minute, adding a teaspoon of water if the spices look like they are burning.

    Sauté the Maghaz

    Gently fold in the brain chunks. Do not stir vigorously or you will end up with a mush. Use a flipping motion to coat each piece with the masala.

    Slow Cook to Finish

    Lower the heat to minimum. Cover and cook for 5-7 minutes. The brain will release a little moisture and then absorb all the flavors of the spice base.

    Final Seasoning

    Sprinkle garam masala and crushed kasuri methi over the dish. Give it one last very gentle stir and turn off the heat.

    Garnish

    Top with a generous amount of fresh coriander and ginger juliennes for a fresh contrast to the rich brain.

Notes & variations

  • Freshness is paramount; only buy brain from a trusted butcher on the day of cooking.
  • The cleaning process is the most important step to ensure there is no metallic or 'off' taste.
  • In Amritsar, this is often cooked on a massive iron tawa which gives it a slight smoky char.
  • Do not over-cook; the interior should remain creamy like a soft-scrambled egg.

Serve with

Buttery toasted Pav (buns) or crisp Tandoori Roti.

Cook's note

Use a flat spatula (palta) instead of a spoon to turn the brain pieces to keep them intact.
