- 500g Bottle gourd (Anapakaya), peeled and cut into 1-inch cubes
- 1.5 cups (360ml) Whole milk, at room temperature
- 2 tbsp Vegetable oil
- 1/2 tsp Turmeric powder
- 2-3 Green chilies, slit
Tempering (Tadka)
- 1 tsp Mustard seeds
- 1 tsp Cumin seeds
- 1 tbsp Urad dal (split black gram)
- 2 Dry red chilies, broken
- 1 sprig Curry leaves
- 1/2 tsp Hing (Asafoetida)
- Salt to taste

Temper the spices
Heat oil in a heavy pan over medium heat. Add mustard seeds and let them pop. Follow with cumin seeds, urad dal, red chilies, and curry leaves. Fry until the urad dal turns golden brown and aromatic, ensuring the hing is added at the very end to prevent burning.

Sauté the vegetable
Add the bottle gourd cubes, green chilies, and turmeric to the pan. Sauté for 3-4 minutes until the gourd is well-coated with the tempered oil and begins to look slightly translucent.

Partial steam cook
Add a splash of water (about 1/4 cup), cover the pan with a tight lid, and cook on low-medium heat for 8-10 minutes. The gourd should be fork-tender but not mushy. If it releases too much water, cook uncovered for a minute.

Prepare for milk
Lower the heat to the lowest possible setting. This is critical because adding milk to a boiling pan will cause it to curdle immediately. Wait for the bubbling to subside.

Simmer in milk
Slowly pour in the room-temperature milk while stirring continuously. Increase the heat slightly to medium-low and bring to a very gentle simmer. Do not let it reach a vigorous boil.

Thicken the sauce
Allow the curry to simmer uncovered for 5-7 minutes. The milk will reduce slightly and thicken into a creamy sauce that clings to the bottle gourd cubes. Stir occasionally to prevent sticking.

Add salt only at the very end of the cooking process. Adding salt to the milk early can often cause curdling. Taste and adjust seasoning, ensuring the sweetness of the gourd and milk is balanced.

Once the gravy reaches a coating consistency and the vegetable is fully cooked, turn off the heat. Let it sit for 2 minutes before serving to allow the flavors to meld.
