Dilli Wala Badaam Milk
Rich, saffron-tinted almond milk served hot in winters or chilled in summers.

A walk through Old Delhi's Chandni Chowk is incomplete without a glass of this saffron-infused elixir. Traditionally prepared in massive iron 'kadhais' where the milk reduces for hours, this version captures that creamy, nutty essence. It is a celebratory drink, served warm during the biting Delhi winters and chilled during the scorching summers.
Ingredients
The Almond Base
- 50g (1/3 cup) Whole Almonds, soaked and peeled
- 2 tbsp Milk (for blending)
- 10-12 Pistachios, blanched and slivered for garnish
The Milk Infusion
- 1 Liter Full-fat Cow Milk
- 1/2 tsp Saffron strands (Kesar), soaked in 2 tbsp warm milk
- 4-5 Green Cardamom pods, freshly crushed
- 60g (1/4 cup) Sugar, or to taste
- 1/8 tsp Yellow food color (optional, for that commercial look)

Prepare the Almond Paste
Soak almonds in hot water for 20 minutes, then peel the skins. Grind them with 2 tablespoons of milk into a slightly coarse paste. Don't make it perfectly smooth; a little texture adds to the authentic mouthfeel of Dilli Badaam Milk.

Boil the Milk
Pour the full-fat milk into a heavy-bottomed pot or kadhai. Bring it to a rolling boil over medium-high heat, stirring constantly to prevent the bottom from scorching. Use a wide pot to speed up the reduction process.

Simmer and Reduce
Once the milk boils, lower the heat to medium-low. Let it simmer for 15-20 minutes, scraping the 'malai' (cream) that forms on the sides and stirring it back into the milk. The volume should reduce by about 20%.

Add Almond Paste
Slowly stir in the prepared almond paste. Whisk well to ensure the paste incorporates fully without forming clumps. The milk will start to thicken slightly and take on a pale creamy hue.

Infuse Saffron
Add the saffron-infused milk to the pot. You will see the milk transform into a beautiful golden-yellow color. If the color is too pale, you can add a tiny pinch of turmeric or edible yellow color.

Sweeten and Spice
Add the sugar and crushed cardamom powder. Stir until the sugar is completely dissolved. Continue to simmer for another 5 minutes to let the cardamom aroma penetrate the fat in the milk.

Check Consistency
The milk should be thick enough to coat the back of a spoon lightly but still remain drinkable. Taste for sweetness, bearing in mind that the flavor profile changes slightly when chilled.

Final Garnish
Turn off the heat. Stir in half of the slivered pistachios and extra almond slivers. If serving hot, pour into clay 'kulhads' immediately for an earthy aroma.

Chill (Optional)
If serving cold, let the milk cool to room temperature, then refrigerate for at least 4 hours. The flavors deepen significantly as it rests in the fridge.
Notes & variations
- Always use full-fat milk; toned or skim milk will not yield the required creamy texture.
- For a shortcut, use store-bought almond flour, though the fresh paste is superior.
- Leftover milk can be frozen into 'Kulfi' molds for a delicious dessert.
- Adjust sugar carefully; as the milk reduces, its natural sweetness intensifies.

Serve hot with a side of Jalebis or chilled as a refreshing afternoon treat.
Cook's note
Rubbing the saffron strands in a mortar and pestle before soaking releases much more color and aroma.
