Bendakaya Fry
Crispy okra stir-fry with Telangana spice mix.

Bendakaya Fry, or Bendakaya Kura, in the Telangana style is defined by its lack of sliminess and the use of a potent 'Verusanaga Podi' (peanut-garlic spice mix). While other regions make okra soft, the Telangana kitchen prizes a crispy exterior with a spicy, nutty coating. It is a staple side dish that showcases the Deccani love for peanuts and dry roasting techniques.
Ingredients

- 500g fresh okra (Bendakaya), washed and dried completely
- 3 tbsp peanut oil
- 1/2 tsp turmeric powder
- 1 tsp salt
The Spice Mix (Podi)
- 50g (1/4 cup) raw peanuts
- 1 tbsp coriander seeds
- 4-5 dried red chilies
- 6 cloves garlic, unpeeled
- 1 tbsp desiccated coconut (optional)
The Tempering
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 sprig curry leaves

Prep the okra
Ensure the okra is bone-dry before cutting. Trim the ends and slice into 1/2-inch rounds. Drying the okra prevents the release of mucilage (slime) during the frying process.

Roast the peanuts
In a dry pan, roast peanuts on medium heat for 5 minutes until the skins crack. Add coriander seeds and red chilies for the last 2 minutes until fragrant.

Grind the Podi
Let the roasted spices cool, then grind them along with the garlic cloves and coconut into a coarse powder. The garlic should be added at the end to keep the powder slightly damp but not a paste.

Sear the okra
Heat 2 tbsp oil in a wide, heavy-bottomed kadai. Add the okra in a single layer if possible. Fry on medium-high heat for 8-10 minutes without covering the pan.

Manage the slime
Stir only occasionally. If the okra starts getting sticky, add a teaspoon of lemon juice or yogurt; the acid breaks down the mucilage quickly. Fry until the edges are golden brown.

Create a space for tempering
Push the fried okra to the sides of the pan. Add the remaining 1 tbsp oil in the center. Add mustard seeds, cumin, and curry leaves, letting them sizzle for 30 seconds.

Seasoning
Incorporate the turmeric and salt into the okra. Mix well so the color is even, but be gentle to avoid mashing the tender rounds.

The Spice infusion
Sprinkle the ground peanut-garlic spice mix (Podi) over the okra. Toss everything together for 3-4 minutes on low heat until the powder adheres to the okra and smells toasted.

Final crisping
Increase heat to medium for one final minute to ensure maximum crispness. Turn off the heat and let it sit uncovered for a few minutes before serving.
Notes & variations
- Never cover the pan with a lid while cooking okra, as steam will make it slimy.
- You can make the peanut podi in bulk and store it for up to a month.
- Add a pinch of amchur (mango powder) if you prefer a tangier finish.
- Ensure the okra is tender and green; overgrown okra will be fibrous and woody.
Serve with
Jowar roti (Sorghum flatbread) or as a side to Mudda Pappu (thick dal) and rice.
Cook's note
Washing the okra a few hours in advance and letting it air-dry completely is the most important step for a non-sticky fry.
