About this dish

This crispy okra stir-fry is a textural masterpiece from the Andhra-Telangana border regions. It is less of a 'curry' and more of a 'vepudu' (fry), where the sliminess of the okra is completely removed through high-heat frying. The addition of crunchy peanuts and toasted garlic makes it a favorite side dish for festive thalis and simple everyday meals alike.

Ingredients

The Okra Base

  • 500g Okra (Bendakaya), washed and dried thoroughly
  • 1/2 cup Raw peanuts (Palli)
  • 4 tbsp Peanut oil or Sunflower oil
  • 1/2 tsp Turmeric powder
  • 1 tsp Salt

The Spice Mix

  • 1 tsp Mustard seeds
  • 1 tsp Urad dal (split black gram)
  • 2 Dry red chilies, halved
  • 10-12 Cloves of garlic, crushed
  • 2 sprigs Curry leaves
  • 2 tsp Red chili powder
  • 1 tsp Rice flour (optional for extra crunch)

Method

    Prep the Okra

    Wash the okra and pat them completely dry with a kitchen towel; moisture is the enemy and causes sliminess. Cut off the ends and slice into 1/2-inch rounds.

    Fry the Peanuts

    Heat 1 tablespoon of oil in a large non-stick or iron pan. Fry the peanuts over medium heat for 3-4 minutes until they turn golden brown and crunchy. Remove and set aside.

    Temper the Oil

    Add the remaining oil to the same pan. Add mustard seeds and let them pop. Add urad dal and fry until it turns light brown. Toss in the dry red chilies and curry leaves.

    Infuse Garlic

    Add the crushed garlic to the oil. Sauté for 1 minute until the garlic is golden and fragrant. This garlic-infused oil is the flavor base of the entire dish.

    High Heat Sauté

    Add the sliced okra to the pan. Increase the heat to medium-high. Do not cover the pan. Sauté for 8-10 minutes, stirring occasionally. The okra will initially release slime but will dry out as it cooks.

    Add Turmeric

    Once the okra starts to shrink and the sliminess disappears, sprinkle the turmeric powder. Continue to fry for another 5 minutes until the edges of the okra rounds become crispy and browned.

    Spice and Flour

    Sprinkle the red chili powder and salt. If you want extra crunch, sprinkle 1 teaspoon of rice flour at this stage and toss well for 2 minutes. The flour absorbs any remaining moisture.

    Final Toss

    Add the fried peanuts back into the pan. Toss everything together for 60 seconds so the peanuts are coated in the spices. The okra should be vibrant green with charred, crispy edges.

    Serve Immediately

    Transfer to a serving bowl immediately. If left in the hot pan, the residual heat can make the crispy okra turn soft and chewy.

Notes & variations

  • Never add salt at the beginning; it draws out moisture and makes the okra slimy.
  • Ensure the okra is bone-dry before cutting.
  • Iron pans work best for this recipe as they maintain a high, even heat that crisps the vegetables effectively.
  • Leftovers can be reheated in an air fryer to regain their crunch.

Serve with

Pappu Charu (Lentil Soup) and hot steamed rice.

Cook's note

Adding a few drops of lemon juice while sautéing the okra can help break down the mucilage (slime) faster.
