This fiery chicken fry is a hallmark of the Nattukotai Chettiars' cuisine, known for their masterful use of spices. Dominated by 'Milagu' (Black Pepper) rather than red chilies, it offers a deep, warming heat that lingers. It is traditionally made with country chicken (Naatu Kozhi) for a deeper, gamier flavor.

Ingredients

The Meat and Marinade

  • 500g Chicken, bone-in, small pieces
  • 1/2 tsp Turmeric powder
  • 1 tsp Ginger-garlic paste
  • 1/2 tsp Salt

Fresh Masala Roast

  • 2 tbsp Black peppercorns
  • 1 tbsp Fennel seeds
  • 1 tsp Cumin seeds
  • 2 Dry red chilies

The Varuval Base

  • 3 tbsp Gingelly oil
  • 1 piece Cinnamon, 1 star anise, 2 cloves
  • 150g Pearl onions (Shallots), halved
  • 2 sprigs Curry leaves
  • 1 tbsp Ginger-garlic paste

Method

    Marinate the chicken

    Coat the chicken pieces with turmeric, salt, and ginger-garlic paste. Let it sit for 20 minutes to tenderize the fibers.

    Dry roast spices

    In a small pan, roast peppercorns, fennel, cumin, and red chilies over low heat until the fennel turns golden and the pepper releases a sharp aroma. Do not burn.

    Grind the spice

    Once cooled, grind the roasted spices into a coarse powder. A coarse texture is vital for the 'Varuval' mouthfeel; avoid making it a fine dust.

    Bloom the whole spices

    Heat oil in a heavy iron kadai. Add cinnamon, cloves, and star anise. Once they sizzle and release fragrance, add the curry leaves.

    Sauté shallots

    Add the pearl onions. Sauté on medium heat until they reach a deep golden brown. The sweetness of the shallots balances the pepper's heat.

    Sear the meat

    Add the marinated chicken to the pan. Increase heat to high and sear for 5 minutes, stirring constantly until the chicken juices are sealed and the exterior turns white.

    Slow cook

    Cover the pan and cook on low heat for 15-20 minutes. The chicken should cook in its own juices. If using country chicken, you may need to add 1/2 cup of water.

    Pepper coating

    Once the chicken is tender and the oil separates, add the prepared ground masala powder. Toss vigorously on high heat for 3-4 minutes to coat every piece.

    The roast finish

    Continue sautéing (Varuval means fry/roast) until the chicken looks dark and dry, and the spices form a thick crust around the meat.

Notes & variations

  • Using Shallots (Pearl onions) is mandatory for authentic Chettinad flavor; regular onions are too watery.
  • Gingelly oil (Sesame oil) provides the characteristic nutty undertone and balances the heat.
  • Adjust pepper quantity based on heat tolerance, but this dish is meant to be spicy.
  • If using boneless chicken, reduce cooking time by 10 minutes.

Serve with

Serve as an appetizer or as a side with Rasam Rice or Curd Rice.

Cook's note

Finish with a handful of fresh curry leaves fried in a teaspoon of oil for an extra aromatic punch.
