Chettinad Seeraga Samba Veg Biryani
Fragrant short-grain rice cooked with vegetables and stone flower.

About this dish
Unlike the long-grained Basmati biryanis of the north, Chettinad biryani uses 'Seeraga Samba', a tiny, oval-shaped grain that absorbs spice intensely. This vegetarian version relies on 'Kalpasi' (stone flower) and a fresh-ground masala for its signature smoky, woody aroma. It is a celebratory Sunday lunch staple across the Karaikudi region.
Ingredients
Rice and Soaking
- 400g (2 cups) Seeraga Samba rice, washed and soaked for 20 mins
- 700ml Water (1:1.75 ratio for this specific rice)
- 1 tbsp Ghee
The Aromatics
- 2 tbsp Ginger-Garlic paste, freshly pounded
- 2 large Onions, thinly sliced
- 2 medium Tomatoes, chopped
- 3 Green chillies, slit
- 1/2 cup Mint leaves, tightly packed
- 1/2 cup Coriander leaves, chopped
Vegetables
- 1 cup Mixed vegetables (Carrots, Beans, Green Peas)
- 1 medium Potato, cubed
Whole Spices and Powder
- 2 pieces Cinnamon (1 inch each)
- 4 Cloves
- 3 Cardamoms
- 1 piece Kalpasi (Stone Flower), essential for aroma
- 1 Star anise
- 1 tsp Fennel seeds (Saunf)
- 2 tsp Kashmiri red chilli powder
- 1 tbsp Coriander powder

Sautéing the whole spices
Heat oil and ghee in a heavy-bottomed pressure cooker or handi. Add cinnamon, cloves, cardamom, fennel seeds, star anise, and the stone flower; sauté until they sizzle and release a woody fragrance.

Caramelizing onions
Add sliced onions and a pinch of salt. Fry on medium heat for 8-10 minutes until the onions turn a deep translucent brown, which provides the base color for the biryani.

Adding aromatics
Toss in the ginger-garlic paste and slit green chillies. Sauté for 2-3 minutes until the raw smell of garlic disappears completely.

Cooking the tomatoes
Add chopped tomatoes and cook until they turn mushy and the oil starts separating from the sides of the masala.

Spice integration
Add chilli powder, coriander powder, and salt. Stir rapidly for 1 minute on low heat to prevent the dry spices from burning.

Vegetable infusion
Add the mixed vegetables, potatoes, mint, and coriander leaves. Coat them thoroughly in the masala and cook for 2-3 minutes.

Boiling the water
Pour in 700ml of water. Taste the water; it should be slightly 'over-salted' (like seawater) to ensure the rice is perfectly seasoned after cooking.

Adding the rice
Drain the soaked Seeraga Samba rice completely and add it to the boiling water. Gently stir once to avoid breaking the delicate short grains.

The Pressure Cook/Dum
Close the lid. If using a pressure cooker, cook for one whistle on high, then simmer for 5 minutes on low. If using a pot, cover tightly and cook on low for 15 minutes.

Fluffing the rice
Wait for 15 minutes before opening. Use a fork to gently fluff the rice from the edges to the center, ensuring the grains remain distinct and not mashed.
Notes & variations
- Do not over-soak Seeraga Samba; 20 minutes is the limit or it will become mushy.
- Kalpasi (Stone Flower) is the secret ingredient; do not skip it if you want the 'Chettinad' flavor.
- You can add fried meal maker (soya chunks) for extra protein texture.
- If using a pot, use a heavy weight on the lid to simulate the Dum effect.
Serve with
A cool Onion-Cucumber Raitha and Ennai Kathirikai (Baby Eggplant Curry).
Cook's note
A squeeze of half a lemon just before closing the lid keeps the rice grains pearl-like and separate.
