Chicken Patiala
A rich, creamy chicken gravy topped with a thin saffron-tinted egg omelet.

Named after the royal city of Patiala, this dish is a display of Punjabi decadence. It is famous for its unique presentation: succulent chicken pieces cooked in a rich, nutty gravy, which are then partially covered or rolled in a delicate egg omelet. It is a celebratory dish, often served at weddings and high-end Punjabi restaurants.
Ingredients
For the Chicken Marinade
- 600g Boneless chicken, cut into cubes
- 1/2 cup Greek yogurt
- 1 tbsp Ginger-garlic paste
- 1 tsp Turmeric powder
- 1 tsp Salt
For the Gravy Base
- 3 tbsp Oil or Ghee
- 2 large Onions, finely chopped
- 1 cup Tomato puree
- 10 Cashews, soaked and ground to a paste
- 1 tsp Cumin seeds
- 1 inch Cinnamon stick
- 4 Green cardamoms
Spices and Finishing
- 1 tsp Coriander powder
- 1 tsp Garam masala
- 1/2 tsp Black pepper powder
- 2 tbsp Heavy cream
- 1 tsp Kasuri methi
For the Omelet Layer
- 2 Eggs
- Pinch of Salt
- Pinch of Saffron threads (optional)
- 1 tsp Butter

Marinate the Chicken
In a large bowl, whisk yogurt with ginger-garlic paste, turmeric, and salt. Add chicken pieces, ensuring they are well-coated. Let this marinate in the refrigerator for at least 30 minutes to tenderize the meat.

Sauté Whole Spices
Heat oil or ghee in a heavy pot over medium heat. Add cumin seeds, cinnamon, and cardamoms. Wait for the spices to crackle and release their oils into the fat, filling the kitchen with a warm aroma.

Cook the Onion Base
Add the finely chopped onions. Sauté on medium-low heat for 12-15 minutes, stirring frequently. The onions should transition from translucent to a deep, caramelized golden brown for a rich gravy color.

Tomato and Cashew Integration
Pour in the tomato puree and cook until the moisture evaporates and the oil separates. Stir in the cashew paste, which will immediately thicken the mixture and add a silky, nutty undertone.

Sear the Chicken
Increase the heat to medium-high and add the marinated chicken. Sauté for 5-6 minutes until the chicken pieces are sealed and the yogurt coating starts to dry up and stick to the meat.

Simmer the Gravy
Add coriander powder, black pepper, and half a cup of water. Cover the pot and simmer on low heat for 15-20 minutes until the chicken is tender and cooked through. The gravy should be thick and coat the back of a spoon.

Final Creamy Touch
Stir in the heavy cream, garam masala, and crushed kasuri methi. Simmer for another 2 minutes. The cream will mellow the spices and give the dish its signature royal sheen. Keep the chicken warm.

Prepare the Omelet
In a bowl, whisk two eggs with salt and saffron. Heat a non-stick frying pan with a little butter and pour the egg to make a very thin, crepe-like omelet. Cook just until set, then slide it onto a plate.

Transfer the chicken curry to a serving bowl. Drape the thin omelet over the top, or cut the omelet into strips and swirl them into the gravy just before serving, allowing the egg to absorb the spicy sauce.
Notes & variations
- For a spicier kick, add 2 slit green chilies during the onion sautéing stage.
- Cashew paste can be substituted with almond paste for a lighter nuttiness.
- Ensure the omelet is very thin; if it's too thick, it will feel rubbery in the gravy.
- This dish is best eaten fresh; the egg texture changes if reheated multiple times.

Serve with Garlic Naan or Laccha Paratha and sliced red onions with lime.
