About this dish

While lemonade is global, Shikanji is Delhi's soul, perfected at stalls in Chandni Chowk and Jain Shikanji outlets. It is a sweet, salty, and pungent cooler that uses a unique spice blend to combat the dry 'Loo' winds of North India. The key is the 'Shikanji Masala', a heavy-hitting mix of black salt and roasted cumin.

Ingredients

The Shikanji Masala (Yields extra)

  • 2 tbsp roasted cumin seeds (bhuna jeera)
  • 1 tbsp black salt (kala namak)
  • 1/2 tsp dry ginger powder (sonth)
  • 1/2 tsp black peppercorns
  • 1/4 tsp regular sea salt

The Drink

  • 2 large lemons, juiced
  • 4 tbsp sugar (adjust to taste)
  • 500ml chilled soda water or still water
  • 8-10 fresh mint leaves
  • 1/2 inch ginger, julienned
  • Ice cubes, crushed

Method

    Toast the Cumin

    In a small pan, dry roast the cumin seeds on low heat until they turn a deep brown and release a nutty, smoky aroma. Be careful not to burn them, as charred cumin becomes unpleasantly bitter.

    Grind the Masala

    Once cooled, grind the roasted cumin with black salt, peppercorns, and ginger powder in a mortar and pestle. The texture should be a fine powder. This masala is the 'heart' of the drink, providing the digestive properties Delhiites swear by.

    Dissolve the Sugar

    If using still water, dissolve the sugar in a small amount of warm water first to create a simple syrup. If using soda, use powdered sugar to ensure it dissolves instantly without losing the carbonation of the drink.

    Lemon Extraction

    Squeeze fresh lemons directly into a tall pitcher. Ensure no seeds fall in. The freshness of the lemons is paramount; avoid bottled juice as it lacks the essential citrus oils found in the zest of fresh fruit.

    Bruise the Herbs

    Take the fresh mint leaves and lightly clap them between your palms or bruise them with a muddler. This releases the essential oils without turning the leaves into a bitter paste. Add them to the pitcher.

    Mix the Base

    Add 1.5 teaspoons of your freshly ground Shikanji Masala to the lemon-sugar mixture. Stir vigorously to combine. The liquid will turn a cloudy, murky brown—this is exactly how authentic Dilli Shikanji should look.

    The Aeration (The Pour)

    Pour in the chilled soda or water. If you want to be authentic, pour the drink from one glass to another from a height (long-pour) to create a frothy head and thoroughly mix the spices.

    Garnish and Chill

    Fill tall glasses with plenty of crushed ice. Pour the Shikanji over the ice. The cold temperature is vital for the carbonation to feel refreshing against the spicy masala.

    Final Touch

    Drop in the ginger juliennes. They provide a sharp, clean finish to each sip. Stir once more and serve immediately while the fizz is at its peak.

Notes & variations

  • Store the remaining Shikanji Masala in an airtight jar for up to 3 months.
  • For a healthier version, substitute sugar with honey or jaggery powder.
  • Using club soda instead of plain water makes it a 'Masala Soda', a popular variant.
  • Always use Black Salt (Kala Namak); regular salt cannot replicate the sulfurous, tangy depth.

Serve with

Serve chilled in a tall glass with a sprig of mint and a lemon slice on the rim.

Cook's note

Roast the cumin seeds until they are almost dark brown to get that specific 'Delhi street' smoky flavor.
