Dum ke Baingan
Whole stuffed baby eggplants slow-cooked in a rich nut gravy.

About this dish
Dum ke Baingan is a royal Hyderabadi delicacy that showcases the 'Dum' (slow-steaming) technique applied to vegetables. Small purple eggplants are stuffed with a rich, tangy paste of roasted peanuts, sesame, and coconut, then slow-cooked until they are butter-soft. It is a star dish at Hyderabadi weddings, representing the city's love for nutty, complex gravies.
Ingredients
Vegetables and Stuffing
- 500g Small purple eggplants (baby brinjals)
- 1/2 cup Peanuts, roasted and skinned
- 2 tbsp Sesame seeds (Til), roasted
- 2 tbsp Dry coconut (Khopra), grated and roasted
- 1 tbsp Poppy seeds (Khus Khus), soaked (optional)
- 1 tsp Tamarind paste
Gravy Base
- 3 tbsp Oil
- 1 large Onion, finely chopped
- 1 tbsp Ginger-garlic paste
- 1 tsp Red chili powder
- 1/2 tsp Turmeric powder
- 1 tsp Cumin-coriander powder

Prepare the nutty paste
Grind the roasted peanuts, sesame seeds, coconut, and poppy seeds with a little water into a very smooth, thick paste. Add the tamarind paste, red chili powder, turmeric, and a pinch of salt to this mixture and blend once more.

Prep the eggplants
Wash the eggplants and keep the stalks intact. Make a cross-cut (X) from the base of each eggplant, stopping about half an inch before the stalk. Soak them in salted water for 10 minutes to remove bitterness.

Stuff the eggplants
Drain and pat dry the eggplants. Carefully stuff a teaspoon of the prepared masala paste into the slits of each eggplant. Reserve the remaining masala paste for the gravy.

Fry the aromatics
Heat oil in a wide, flat-bottomed pan. Add the chopped onions and sauté until they are soft and translucent. Add the ginger-garlic paste and sauté until the raw aroma dissipates.

Sauté the stuffed baingan
Gently place the stuffed eggplants into the pan. Sauté them on medium heat for 5-7 minutes, turning them carefully with tongs until the skin begins to blister and change color slightly.

Create the gravy
Pour in the remaining masala paste and add 1 cup of water. Stir gently to mix the paste with the oil without breaking the eggplants. The gravy should be thick but pourable.

The Dum stage
Cover the pan with a very tight lid. Reduce the heat to the lowest setting. Let it cook in its own steam for 15-20 minutes. The eggplants should become completely tender and the oil (Roghan) should float on top.

Final adjustment
Check the salt and tanginess. If it is too thick, add a tablespoon of hot water. The gravy should be velvety and clinging to the vegetables. Garnish with fresh cilantro.

Resting
Allow the dish to sit covered for 5 minutes after turning off the heat. This helps the flavors of the peanuts and sesame to intensify.
Notes & variations
- Ensure you roast the peanuts and sesame on low heat to prevent bitterness.
- If you don't have poppy seeds, increase the peanut quantity slightly for thickness.
- This dish can be made a day in advance as the flavors deepen over time.
- Use a heavy-bottomed pan to prevent the nut-based gravy from scorching at the bottom.

Serve with Hyderabadi Biryani, Bagara Khana (tempered rice), or Rumali Roti.
Cook's note
Deep fry the stuffed eggplants for 2 minutes before adding to the gravy for a richer, restaurant-style texture.
