Golichina Mamsam
A fiery Telangana-style mutton fry with a thick, clinging masala.

Originating from the Telangana region, 'Golichina' literally means 'fried' in the local dialect. This dish is characterized by its intense heat and the use of 'Mamidikaya' (mango) wood fire cooking in rural areas. It is a dry, robust preparation where the meat is slow-cooked until the juices evaporate into a thick, concentrated masala that coats every piece.
Ingredients
The Meat and Marinade
- 750g Mutton (goat meat), cut into small 1-inch cubes
- 1 tsp Turmeric powder
- 1 tbsp Ginger-garlic paste
- 1 tsp Salt
The Spice Mix
- 3 tbsp Spicy red chilli powder (Guntur variety)
- 1 tbsp Coriander powder
- 1 tsp Roasted cumin powder
- 1.5 tsp Garam masala (clove and cinnamon heavy)
The Sauté (Golichina)
- 4 tbsp Groundnut oil
- 2 large Onions, finely sliced
- 6-8 Green chillies, slit lengthwise
- 3 sprigs Curry leaves
- 1/2 cup Fresh coriander, chopped

Tenderize the Meat
Pressure cook the mutton with turmeric, ginger-garlic paste, salt, and half a cup of water for 4-5 whistles until 80% cooked. Do not overcook; the meat must retain its shape for the frying stage.

Heat the Kadai
Heat oil in a heavy iron kadai (wok). Iron helps in achieving the deep dark color characteristic of this dish. Add sliced onions and sauté on medium heat.

Caramelize Onions
Fry the onions for 8-10 minutes until they are deep golden brown. Add the green chillies and curry leaves, letting them blister and release their oils.

Add Pre-cooked Mutton
Add the mutton pieces into the pan, leaving the residual stock in the cooker for now. Increase heat to high and toss the meat to sear the edges.

The Dry Spice Infusion
Reduce heat to medium-low. Add the chilli powder, coriander powder, and cumin powder. Stir rapidly to prevent the spices from burning while they toast in the oil.

Reduce the Stock
Pour in the remaining mutton stock from the pressure cooker. This contains all the flavor. Let it cook uncovered on medium-high heat.

The Frying Stage (Golichina)
As the liquid evaporates (approx 15 mins), the masala will start sticking to the meat. Stir frequently, scraping the bottom of the pan to incorporate the browned bits.

Final Tempering
Once the meat is dark and dry, sprinkle the garam masala and half the fresh coriander. Toss for another 3-4 minutes until the oil separates completely.

Resting
Turn off the heat and let the meat sit in the pan for 5 minutes. The residual heat will finish the 'roasting' process, giving it a characteristic crust.
Notes & variations
- Use bone-in mutton for better flavor, though boneless is easier for frying.
- Adjust green chillies based on your heat tolerance; Telangana food is notoriously spicy.
- If the meat gets too dry before it's tender, add a tablespoon of hot water and cover for 2 minutes.
- Adding a teaspoon of peppercorn powder at the end adds a different dimension of heat.
Serve with
Hot steamed rice and Tella Charu (a clear, spicy buttermilk rasam).
