Gur Ka Sharbat
Paharganj style traditional jaggery drink, extremely refreshing.

About this dish
Originating from the narrow lanes near Paharganj, this cooling drink is a traditional antidote to Delhi's blistering summer heat. Unlike refined sugar drinks, Gur Ka Sharbat uses raw jaggery and is often flavored with fennel and black salt. It's a rustic, earthier alternative to lemonade, traditionally sold by vendors from large brass pots cooled by ice blocks.
Ingredients
The Sweet Base
- 150g Dark Jaggery (Gur), crushed or grated
- 1 liter Chilled water
- 2 tbsp Lemon juice
The Aromatics
- 1 tsp Fennel seeds (Saunf), crushed
- 1/2 tsp Black salt (Kala Namak)
- 1/4 tsp Cumin powder, roasted
- 10-12 Fresh mint leaves, torn
- Ice cubes for serving

Dissolve the jaggery
Place the crushed jaggery in a bowl with 1 cup of room-temperature water. Stir or let it soak for 15 minutes until completely dissolved into a thick syrup.

Strain the syrup
Pour the jaggery liquid through a fine-mesh strainer into a large pitcher to remove any impurities or grit often found in raw jaggery.

Dilute
Add the remaining chilled water to the pitcher. The ratio should be roughly 1 part jaggery syrup to 4 parts water, depending on the sweetness of your jaggery.

Add acidity
Stir in the fresh lemon juice. This is crucial as it balances the deep, molasses-like sweetness of the jaggery with bright acidity.

Infuse spices
Add the black salt, roasted cumin powder, and crushed fennel seeds. Stir well for 1 minute to ensure the spices are evenly distributed.

Bruise the mint
Take the fresh mint leaves in your palm and clap them once to release the essential oils, then drop them into the pitcher.

Chill and settle
Let the mixture sit in the refrigerator for at least 30 minutes. This allows the fennel and mint to steep and flavor the water naturally.

Final serve
Fill tall glasses with ice cubes and pour the sharbat over. Garnish with an extra sprig of mint and a thin slice of lemon.
Notes & variations
- Use dark, unrefined jaggery for the most authentic, deep flavor.
- Adjust lemon juice based on how 'tangy' you prefer your summer drinks.
- For a fizzier version, replace half the water with plain soda water just before serving.
- Discard mint leaves after 4 hours as they can turn bitter if left too long.

Serve as a mid-afternoon cooler or alongside spicy street snacks.

Soak 1 tsp of basil seeds (Sabja) and add a spoonful to each glass for extra cooling properties.
