About this dish

Commonly known as 'Bella Kaapi' in Malnad and rural Karnataka, this is the traditional way coffee was consumed before milk became widely available in all households. It is a medicinal and warming brew, particularly popular during the monsoon. The use of jaggery (bella) instead of sugar provides an earthy depth that complements the local Arabica beans.

Ingredients

  • 2 cups Water
  • 2 tablespoons Coarse coffee powder (Pure coffee, no chicory)
  • 3 tablespoons Dark jaggery, crushed
  • 1 inch Fresh ginger, bruised
  • 2-3 Green cardamom pods, crushed
  • 4-5 Black peppercorns, crushed (optional for spice)

Method

    Boil Water and Aromatics

    In a small saucepan, bring 2 cups of water to a rolling boil. Add the bruised ginger, crushed cardamom, and peppercorns. Boil for 3 minutes to allow the essential oils of the spices to infuse into the water.

    Add Jaggery

    Add the crushed jaggery to the boiling water. Stir until the jaggery is completely dissolved. Using dark, organic jaggery will give the coffee a deep mahogany color and a rich, molasses-like flavor.

    Add Coffee Powder

    Turn the heat to low and add the coarse coffee powder. Do not boil vigorously after adding the coffee, as this can make the brew excessively bitter and ruin the delicate oils.

    Simmer Gently

    Let the mixture simmer on the lowest heat setting for exactly 2 minutes. You will see a dark foam forming on top; this is where the flavor resides.

    The Rest Period

    Turn off the heat. Cover the saucepan with a lid and let it sit undisturbed for 3-4 minutes. This allows the coffee grounds to settle at the bottom naturally without a filter.

    Strain the Coffee

    Carefully strain the coffee through a fine-mesh tea strainer into traditional brass or steel tumblers. Avoid shaking the pot while pouring to keep the sediments at the bottom.

    Adjust Sweetness

    Taste the brew. The intensity of jaggery varies; if it is too strong, you can dilute it with a tablespoon of hot water. If not sweet enough, stir in a little more jaggery syrup.

    Froth (Optional)

    For an authentic touch, pour the coffee back and forth between two tumblers from a height to create a slight froth and aerate the drink.

    Final Serve

    Serve immediately while steaming hot. The aroma should be a mix of earthy coffee, sharp ginger, and sweet jaggery.

Notes & variations

  • Use pure coffee powder; chicory-blended coffee (used for filter coffee) does not suit this recipe.
  • Dry ginger powder (sonth) can be used if fresh ginger is unavailable.
  • Adjust jaggery based on how dark and intense your specific variety is.
  • For a cold version, let it cool and serve over ice, though it is traditionally a hot drink.

Cook's note

Bruise the ginger rather than grating it to get a clean flavor without making the coffee cloudy.
