Ingredients

The Dal Base

  • 1 cup (200g) Chana dal (Bengal gram)
  • 2 cups (500ml) Water
  • A pinch of salt

The Sweetener & Aromatics

  • 1.5 cups (300g) Dark jaggery, powdered
  • 1/2 cup (115g) Ghee (Clarified butter)
  • 1/2 cup (50g) Dry coconut (Kobra), thinly sliced or grated
  • 1 tbsp (10g) Poppy seeds (Khus Khus)
  • 1/2 tsp Cardamom powder
  • 10-12 Cashew nuts
  • 1 tbsp Raisins

Method

    Pressure Cook the Dal

    Wash the chana dal thoroughly and pressure cook with 2 cups of water and a pinch of salt for 3-4 whistles. The dal should be cooked 'malige' style—soft enough to mash between fingers but still holding its individual shape. Drain any excess water (which can be used for rasam).

    Prepare Jaggery Syrup

    In a heavy-bottomed pan, combine the jaggery with 1/4 cup of water. Heat until the jaggery melts completely, then strain through a fine mesh to remove impurities. Return the syrup to the pan and boil on medium heat for 3-5 minutes until it becomes slightly sticky.

    Lentil Integration

    Add the cooked chana dal to the boiling jaggery syrup. Using a spatula, lightly mash about 20% of the dal against the sides of the pan—this creates a thick, binding consistency while keeping the rest of the grains whole. Cook on low-medium heat for 8-10 minutes.

    Roast the Crunch

    In a separate small pan, heat 2 tablespoons of ghee. Fry the cashew nuts until golden, then add raisins until they plump up. Add the poppy seeds and sliced dry coconut, frying for 30 seconds until the coconut turns golden brown and aromatic.

    Final Assemblage

    Pour the fried nuts, coconut, poppy seeds, and all remaining ghee into the dal-jaggery mixture. Stir in the cardamom powder. Continue cooking and stirring for another 5 minutes until the mixture thickens and starts leaving the sides of the pan, glistening with ghee.

Notes & variations

  • Do not overcook the dal into a paste; the beauty of this dish lies in the texture of the whole grains.
  • Use dark 'chemical-free' jaggery for a deep mahogany color and richer flavor.
  • Adjust the jaggery to 2 cups if you prefer an intensely sweet dessert.
  • This stays fresh for 3-4 days at room temperature due to the high ghee and jaggery content.

Cook's note

Roasting the poppy seeds and dry coconut separately in ghee is the secret to the authentic Udupi flavor.
