About this dish

Born in the royal kitchens of the Nizams, Boti Kabab represents the refined art of charcoal grilling. Unlike the larger chunks of Peshawari kababs, Hyderabadi Boti involves smaller, bite-sized pieces of mutton marinated twice to ensure extreme tenderness. It is a quintessential street food in the Charminar area during Ramadan and a staple at Hyderabadi weddings.

Ingredients

First Marinade

  • 600g Boneless Mutton (leg or shoulder), cut into 1-inch cubes
  • 1 tbsp Raw papaya paste (with skin)
  • 1 tsp Salt
  • 1 tbsp Ginger-garlic paste

Second Marinade

  • 1/2 cup Thick Greek yogurt (hung curd)
  • 2 tsp Kashmiri red chili powder
  • 1 tsp Roasted cumin powder
  • 1/2 tsp Garam masala powder
  • 1/2 tsp Black pepper powder
  • 2 tbsp Fried onion paste (Birista)
  • 2 tbsp Melted ghee or butter
  • 1 tbsp Lemon juice

Method

    Tenderize the Meat

    In a large glass bowl, mix the mutton cubes with raw papaya paste, salt, and ginger-garlic paste. Massage the mixture into the meat for 2 minutes. Cover and refrigerate for at least 2 hours; the enzymes in the papaya are essential for breaking down tough mutton fibers.

    Prepare Second Marinade

    In another bowl, whisk the hung curd until smooth. Add the chili powder, cumin, garam masala, pepper, fried onion paste, and melted ghee. The mixture should be thick enough to coat the meat without dripping.

    Combine and Marinate

    Wipe off excess moisture from the first marinade and mix the mutton into the yogurt spice blend. Ensure every 'boti' (piece) is well coated. Let it marinate for another 2-4 hours in the refrigerator.

    Prepare Skewers

    If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread 5-6 pieces of mutton onto each skewer, leaving a tiny gap between pieces to ensure even heat circulation.

    Heat the Grill

    Prepare a charcoal grill until the coals are glowing red with a layer of grey ash, or preheat an oven grill to 240°C. If using a pan, use a heavy cast-iron grill pan on medium-high heat.

    Initial Sear

    Place skewers on the grill. Cook for 3-4 minutes per side. The meat should develop a slight char and the yogurt marinade should dry up, forming a crust.

    Basting

    Brush the kababs generously with melted ghee or butter. This prevents the meat from drying out and creates the signature smoky flare-ups on a charcoal grill that add flavor.

    Final Char

    Continue grilling for another 6-8 minutes, rotating frequently. The meat is done when it feels firm but has a slight give, and the internal temperature reaches 70°C. Do not overcook or the mutton will become rubbery.

    Resting

    Remove the skewers from the heat and let them rest for 3-5 minutes. This allows the juices to redistribute, ensuring every bite is moist and flavorful.

Notes & variations

  • Raw papaya paste is the secret; do not omit it or the mutton will be tough.
  • Hung curd is essential; watery yogurt will make the marinade slide off the meat.
  • You can add a drop of red food coloring if you want the vibrant restaurant look, though it is not authentic to home cooking.
  • For a smoky flavor indoors, use the 'dhungar' method with a hot coal and ghee in the marinade bowl.

Serve with

Mint-yogurt chutney, sliced red onions, and fresh lemon wedges.
