Iyer Inji Puli
A balanced ginger and tamarind pickle, essential for feasts.

About this dish
A cornerstone of the Tamil Brahmin (Iyer) feast or 'Sadya', Inji Puli is a dark, jam-like relish. It represents the 'six tastes' of Ayurveda, balancing the heat of ginger, the sourness of tamarind, and the sweetness of jaggery. It is often served in small quantities as a digestive aid during heavy celebratory meals.
Ingredients
The Base
- 150g Fresh Ginger (peeled and finely chopped)
- 50g Tamarind (soaked in 1.5 cups hot water)
- 75g Jaggery powder (adjust for sweetness)
- 4 Green chilies (finely slit)
Tempering
- 3 tbsp Gingelly oil (Sesame oil)
- 1 tsp Mustard seeds
- 1/2 tsp Fenugreek seeds (Methi)
- 2 Dried red chilies
- 2 sprigs Curry leaves
- 1/4 tsp Asafoetida (Hing)
Spice Powders
- 1 tsp Turmeric powder
- 1 tsp Red chili powder
- 1 tsp Salt (to taste)

Prepare Tamarind Extract
Squeeze the soaked tamarind to extract a thick pulp. Strain it to remove all fibers and seeds; you should have about 1 cup of concentrated tamarind water.

Fry the Ginger
Heat 2 tablespoons of gingelly oil in a heavy kadai. Add the finely chopped ginger and fry on low-medium heat for 8-10 minutes until it turns a deep golden brown and slightly crisp.

Add Green Chilies
Add the slit green chilies to the fried ginger and sauté for another 2 minutes until the chilies blister slightly.

Simmer with Tamarind
Pour in the tamarind extract, turmeric, red chili powder, and salt. Bring to a boil, then reduce heat and simmer for 10-12 minutes until the volume reduces by half.

Sweeten the Mix
Add the jaggery powder. The mixture will initially thin out as the jaggery melts, then thicken into a dark, glossy syrup. Stir constantly to prevent burning.

Final Tempering
In a separate small pan, heat the remaining oil. Add mustard seeds, fenugreek seeds, red chilies, curry leaves, and hing. Once the seeds crackle, pour this over the simmering ginger-tamarind mix.

Achieve Consistency
Continue cooking for 3-5 minutes until the oil starts to float on top and the relish coats the back of a spoon thickly.

Cool and Store
Allow the Inji Puli to cool completely to room temperature. The flavors will deepen and mature after 24 hours of resting.
Notes & variations
- The ginger must be chopped very fine; using a paste will result in a different texture.
- Always use Gingelly (untoasted sesame) oil for the authentic 'Iyer' flavor profile.
- This keeps for up to a month in the refrigerator if stored in a dry glass jar.
- If the tamarind is very old and dark, reduce the amount of chili powder.
Serve with
Serve as a side accompaniment with Sambar rice or Curd rice.
Cook's note
Adding a pinch of roasted fenugreek powder at the very end enhances the bitter-sweet aroma significantly.
