Iyer Beans Paruppu Usili

A classic Tamil Brahmin (Iyer) preparation, Paruppu Usili is a sophisticated way of combining protein-rich lentils with vegetables. The term 'Usili' refers to the crumbled, steamed lentil base. While beans are most common, cluster beans (kothavarangai) or banana flowers (vazhaipoo) are also traditional choices for this textural masterpiece.
Ingredients
Lentil Base
- 1/2 cup Toor dal
- 2 tbsp Chana dal
- 4 Dry red chilies (Long variety)
- 1/4 tsp Asafoetida (Hing)
- 1/2 tsp Salt
The Vegetable
- 250g French beans, chopped into 5mm rounds
- 1/4 tsp Turmeric powder
- 1/2 tsp Salt
Tempering
- 2 tbsp Coconut oil
- 1 tsp Mustard seeds
- 1 tsp Urad dal
- 2 sprigs Curry leaves
Method

Soak the lentils
Soak toor dal, chana dal, and red chilies in warm water for at least 1 hour. This ensures the lentils soften enough to grind without becoming a paste.

Coarse grind
Drain the water completely. Grind the lentils, chilies, hing, and salt into a coarse, thick paste. Do not add water; the moisture from soaking is sufficient.

Steam the lentil cakes
Grease an idli steamer plate. Spread the lentil paste into small patties and steam for 10-12 minutes on medium heat until a skewer comes out clean.

Prepare the beans
While steaming, boil the chopped beans in minimal water with turmeric and salt until just tender (al dente). Drain and set aside.

Crumble the lentils
Once the steamed lentil patties cool, crumble them using your hands or pulse them briefly in a blender to get a grainy, sand-like texture.

The Tempering
Heat coconut oil in a large kadai. Add mustard seeds and urad dal. When the dal turns golden, add the curry leaves.

Roast the crumbs
Add the crumbled lentils to the oil. Sauté on low-medium heat for 5-7 minutes. This is crucial—the lentils should become slightly crisp and aromatic.

Combine and toss
Add the cooked beans to the roasted lentils. Mix thoroughly so the lentil crumbles coat the beans evenly.

Final Steam
Cover and cook on very low heat for 2-3 minutes to let the flavors meld. Check for salt and adjust if necessary.
Notes & variations
- Do not overcook the beans; they should retain a slight snap to contrast with the soft lentils.
- Grinding the lentils too fine will result in a sticky mass rather than distinct crumbles.
- Coconut oil is essential for the authentic Iyer flavor profile.
- Leftover Usili can be used as a filling for savory parathas.
Serve with
Traditionally served with Mor Kuzhambu (yogurt-based gravy) and steamed rice.
