Kaddu Ka Dalcha
Lentil and bottle gourd stew often served with Biryani.
About this dish
Kaddu Ka Dalcha is a legendary Hyderabadi accompaniment, traditionally served alongside Bagara Khana or Biryani at weddings. It is a harmonious blend of lentils and bottle gourd (kaddu), flavored with tamarind and a specific blend of spices. While it shares similarities with Sambar, the use of meat stock or specific Deccani spices gives it a unique, thick, and velvety consistency that is distinctly Hyderabadi.
Ingredients
Lentil Base
- 150g Chana Dal (Split chickpeas), soaked for 1 hour
- 50g Toor Dal (Pigeon peas)
- 1/2 tsp Turmeric powder
- 1 tsp Ginger-garlic paste
Vegetables and Tang
- 500g Bottle Gourd (Kaddu), peeled and cut into 2-inch chunks
- 1 large Onion, sliced
- 2 medium Tomatoes, chopped
- 50g Tamarind, soaked and pulp extracted
- 3-4 Green chilies, slit
Spices and Tempering
- 2 tbsp Oil or Ghee
- 1 tsp Red chili powder
- 1 tsp Garam masala
- 10-12 Curry leaves
- 1/2 tsp Cumin seeds
- Fresh mint and coriander leaves

Cook the lentils
Place the soaked chana dal and toor dal in a pressure cooker with 600ml water, turmeric, and ginger-garlic paste. Cook for 5-6 whistles until the lentils are completely mushy. Once the pressure releases, mash the lentils with a whisk or 'dal ghotni' until smooth.

Sauté the base
In a separate large pot, heat oil or ghee. Add cumin seeds and curry leaves until they crackle. Sauté the sliced onions until they turn translucent and slightly golden, then add the slit green chilies.

Softening the gourd
Add the bottle gourd chunks and tomatoes to the pot. Sprinkle a little salt and chili powder. Cover and cook on medium heat for 8-10 minutes, stirring occasionally, until the bottle gourd is tender but not falling apart.

Combine dal and gourd
Pour the mashed lentils into the pot with the cooked bottle gourd. Add the tamarind pulp and adjust the consistency by adding 1-2 cups of water. The dalcha should be thick yet pourable, like a heavy cream soup.

Simmer for flavor
Bring the mixture to a boil, then lower the heat to a simmer. Add the garam masala, chopped mint, and coriander leaves. Let it simmer for 15 minutes to allow the tamarind's tartness to balance the earthiness of the lentils.

Adjust seasoning
Taste for salt and sourness. If it's too sour, add a small piece of jaggery (optional) to balance the flavors. The bottle gourd should have absorbed the yellow hue of the dal and the tang of the tamarind.

Final tempering (Optional)
For extra richness, heat a tablespoon of ghee, fry a few dried red chilies and garlic cloves until brown, and pour over the dalcha just before serving. Cover immediately to trap the aroma.

Check texture
Ensure the bottle gourd pieces are translucent and soft to the bite. The dal base should not separate from the water; it must be a cohesive, emulsified stew.

Resting
Allow the dalcha to sit for at least 20 minutes before serving. The starch in the lentils will thicken the stew further, and the spices will become more pronounced.
Notes & variations
- Use tender bottle gourd; if the seeds are hard, remove the core before cubing.
- You can add mutton pieces (pre-cooked) to this recipe to make 'Mutton Dalcha'.
- Chana dal provides the grit and body, while Toor dal provides the smoothness.
- Store in the refrigerator for up to 3 days; reheat thoroughly as lentils thicken over time.

Perfectly paired with Bagara Khana (tempered rice) or Hyderabadi Mutton Biryani.

Soaking the Chana Dal for at least an hour ensures it mashes perfectly without leaving hard bits in the smooth gravy.
