About this dish

Kamarkattu is a rustic, nostalgic candy found in the village shops of Tamil Nadu. Made with freshly grated coconut and dark jaggery, these candies are known for their rock-hard texture and long-lasting sweetness. They were traditionally a way to preserve coconut and provide a quick energy boost to children and farmers.

Ingredients

  • 1.5 cups Freshly grated coconut (tightly packed)
  • 1 cup Jaggery (Paagu Vellam/dark variety)
  • 1/2 cup Water
  • 1/2 tsp Cardamom powder
  • 1 tsp Dry ginger powder (Sukku)
  • 1 tbsp Ghee (for greasing palms)

Method

    Toast the Coconut

    In a dry pan, lightly toast the grated coconut for 3-4 minutes on low heat. The goal is to remove excess moisture without changing the white color of the coconut.

    Prepare Jaggery Syrup

    In a heavy-bottomed pan, combine jaggery and water. Heat until the jaggery dissolves completely, then strain through a fine mesh to remove impurities.

    Boil to Soft Ball Stage

    Return the clean syrup to the pan and boil on medium heat. To check, drop a bit of syrup in a bowl of water; it should form a soft, pliable ball.

    Reach Hard Ball Stage

    Continue boiling for another 2-3 minutes. Test again in cold water; the syrup should now form a hard ball that makes a 'tink' sound when dropped against the side of the bowl.

    Combine Ingredients

    Immediately add the toasted coconut, cardamom powder, and dry ginger powder to the syrup. Stir vigorously as the mixture begins to thicken and leave the sides of the pan.

    Monitor Texture

    Cook for 2-3 more minutes until the mixture looks glossy and begins to clump together into a mass. Do not overcook or it will become crumbly.

    Cooling Prep

    Transfer the hot mixture onto a greased plate. Allow it to cool for only 1-2 minutes—it must be handled while still quite hot to be shaped.

    Shaping the Candies

    Grease your palms with ghee. Take small portions (about 1 inch) and roll them into firm, smooth balls. Work quickly before the jaggery sets.

    Final Hardening

    Let the balls air dry on a plate for 2 hours. They will harden significantly as they reach room temperature, becoming the signature 'stone-hard' candy.

Notes & variations

  • Dark 'Paagu Vellam' is essential for the deep brown color and specific taste.
  • If the mixture hardens in the pan, reheat it for 30 seconds to soften it for shaping.
  • Do not use desiccated coconut; the natural oils in fresh coconut are needed for flavor.
  • Dry ginger powder is crucial for digestion and balances the heavy sweetness.
