Kane (Lady Fish) Rava Fry is a coastal delicacy prized for its sweet, delicate white flesh. The fish is native to the estuaries of Karnataka. Unlike the masala fry, this version uses a light chili-tamarind marinade and a signature semolina (rava) crust, which provides a satisfying crunch that contrasts with the tender fish inside. It is a staple at beachside shacks and fine-dining Karavali restaurants alike.

Ingredients

The Fish

  • 4 whole Lady Fish (Kane), cleaned and scaled
  • 0.5 tsp Turmeric powder
  • 1 tsp Salt

Marinade

  • 2 tbsp Kashmiri red chili powder
  • 1 tbsp Ginger-garlic paste
  • 1 tsp Tamarind paste
  • 0.5 tsp Black pepper powder

Coating and Frying

  • 0.5 cup Fine semolina (Chiroti Rava)
  • 2 tbsp Rice flour
  • 0.25 tsp Salt (for coating)
  • 4 tbsp Coconut oil for shallow frying

Method

    Prepare the Fish

    Make 2-3 deep diagonal slits on both sides of the cleaned Kane fish. This allows the marinade to penetrate the flesh and helps the fish cook evenly without curling.

    Initial Rub

    Apply salt and turmeric to the fish and let it rest for 5 minutes. Lady fish is delicate, so handle it gently to avoid breaking the skin.

    Apply Marinade

    Mix the chili powder, ginger-garlic paste, tamarind, and pepper into a thick paste. Rub this over the fish and inside the slits. Marinate for 15-20 minutes.

    Prepare Rava Mix

    In a shallow plate, combine the semolina, rice flour, and a pinch of salt. The rice flour helps the rava stick better and adds extra crispness.

    Coat the Fish

    Dredge each fish in the rava mixture, pressing firmly so the semolina adheres to the marinade. Shake off any excess; you want a thin, even coat, not a thick batter.

    Heat the Oil

    Heat coconut oil in a wide frying pan over medium heat. The oil is ready when a pinch of rava dropped in sizzles instantly.

    Shallow Fry

    Place the fish in the pan. Do not crowd the pan. Fry on medium heat for 4 minutes. The rava should turn a pale golden-orange and become crunchy.

    Flip and Crisp

    Carefully flip the fish using a flat tong. Fry the other side for another 3-4 minutes. Since Lady Fish is thin, it cooks very quickly; overcooking will make it dry.

    Drain and Serve

    Once the crust is golden-brown and the fish feels firm, remove from the pan. Drain on a wire rack rather than a paper towel to keep the bottom crust from getting soggy.

Notes & variations

  • If you can't find Kane, Smelt or Whiting are excellent substitutes.
  • Fine rava (semolina) works best; coarse rava may fall off during frying.
  • Ensure the fish is at room temperature before frying to ensure even cooking.
  • A cast-iron skillet provides the best heat retention for a perfect crust.

Serve with

Serve with a wedge of lime, onion rings, and a traditional Mangalorean fish curry with rice.

Cook's note

Double-coat the fish by dipping it back into the marinade and then the rava if you prefer an extra thick, crunchy shell.
