About this dish

Named 'Malligai' (Jasmine) for its delicate, white, and finely shredded appearance, this Karaikudi-style cabbage poriyal is a masterclass in subtle seasoning. Unlike heavy stir-fries, this dish emphasizes the sweetness of the cabbage and the softness of moong dal. It is a staple side dish in a traditional Chettinad 'Sappadu' (full meal).

Ingredients

Main Ingredients

  • 400g Cabbage, very finely shredded
  • 3 tbsp Moong Dal (Split yellow lentils), soaked for 20 mins
  • 1/2 cup Freshly grated coconut
  • Salt to taste

The Tempering

  • 1 tbsp Coconut oil
  • 1 tsp Mustard seeds
  • 1 tsp Urad dal (Split black gram)
  • 2 Dried red chillies, broken
  • 1 Green chilli, finely chopped
  • 1 sprig Curry leaves
  • A pinch of Asafoetida

Method

    Prep the Cabbage

    Shred the cabbage as finely as possible, almost like needles. Rinse in cold water and drain completely in a colander; excess water will make the dish soggy.

    Parboil the Dal

    Cook the soaked moong dal in a separate small pot with just enough water for 5-7 minutes. It should be 'alaru'—cooked through but holding its shape, not mushy.

    Tempering the Oil

    Heat coconut oil in a wide pan. Add mustard seeds; once they burst, add urad dal and fry until it turns a light golden brown.

    Aromatic Sauté

    Add the broken red chillies, green chillies, curry leaves, and asafoetida. The green chilli provides a fresh bite while the red chilli adds a smoky depth.

    Steam-Fry Cabbage

    Add the shredded cabbage to the pan. Sauté on medium-high heat for 2 minutes to coat it with oil, which helps retain its bright color.

    Season and Cover

    Add salt and the parboiled moong dal. Sprinkle a very small amount of water (about 1 tablespoon), cover with a lid, and cook for 4-5 minutes on low heat.

    Check Crunch

    Remove the lid and check the cabbage. It should be tender but still have a slight 'crunch'; overcooking will result in a sulfurous smell and limp texture.

    Coconut Garnish

    Add the freshly grated coconut. Stir for 1 minute on high heat to evaporate any remaining moisture and allow the coconut to release its aroma.

    Final Rest

    Turn off the heat and keep the pan open. Stir once more to fluff the cabbage and dal mixture before transferring to a serving bowl.

Notes & variations

  • Shredding the cabbage very finely is the key to the 'Malligai' (Jasmine) aesthetic.
  • Coconut oil is essential for the authentic fragrance of a Tamil Nadu poriyal.
  • Do not add turmeric; the dish should remain white and green.
  • Ensure the moong dal is drained well before adding to prevent the cabbage from steaming into a mush.

Serve with

Sambar rice, Rasam rice, or as a side for Vatha Kuzhambu.

Cook's note

Massage the shredded cabbage with a pinch of salt and let it sit for 5 minutes, then squeeze out the water if you want an extra-crispy stir-fry.
