About this dish

A rustic Telangana specialty often served in 'Kallu Compound' (toddy shops) and village homes. It utilizes the offal—specifically the intestines and fat—which are cleaned meticulously and fried until they resemble crispy nuggets. It is a zero-waste dish that highlights the community's resourcefulness and love for bold, crunchy textures.

Ingredients

The Offal

  • 500g Lamb intestines (Boti) and fat chunks, cleaned thoroughly
  • 1 tbsp Turmeric powder (for cleaning)
  • 1 tbsp Salt (for cleaning)
  • 1 tbsp Ginger-garlic paste

The Coating

  • 2 tbsp Rice flour
  • 1 tbsp Corn flour (optional, for extra crunch)
  • 2 tbsp Red chilli powder
  • 1 tsp Garam masala
  • 1/2 tsp Salt

Deep Frying

  • 500ml Peanut oil for deep frying
  • 4-5 Green chillies, slit
  • 2 sprigs Curry leaves

Method

  1. 1

    Deep Cleaning

    The most crucial step. Wash the intestines multiple times in warm water with turmeric and salt. Run water through the inside of the tubes until perfectly clean and odorless.

    Par-boiling

    Pressure cook the cleaned boti with ginger-garlic paste, a pinch of turmeric, and 1 cup of water for 6-8 whistles. The boti should be tender but still have a 'snap'.

    Drying

    Drain the cooked boti thoroughly in a colander. Spread them on a kitchen towel for 10 minutes to remove excess moisture; this prevents dangerous splattering during frying.

    Cutting

    Cut the intestines into small 1-inch pieces. Keep the small bits of fat separate as they will render and crisp up differently.

    Seasoning

    In a bowl, toss the boti pieces with chilli powder, salt, and garam masala. Ensure every piece is coated evenly.

    The Flour Coat

    Sprinkle the rice flour and corn flour over the seasoned boti. Toss lightly so a thin, dusty layer forms. This ensures the 'Gorelu' (crispy) texture.

    Frying in Batches

    Heat oil in a deep pan until it reaches 180°C. Fry the boti in small batches to avoid crowding, which leads to soggy offal. Fry for 4-5 minutes per batch.

    The Crunch Factor

    Fry until the bubbling stops and the boti turns a deep golden brown and feels hard/crispy to the touch. In the last 30 seconds of the final batch, throw in green chillies and curry leaves.

    Draining

    Remove with a slotted spoon and place on paper towels. The fat chunks will have become tiny, crispy flavor bombs.

Notes & variations

  • Intestines must be cleaned very thoroughly to avoid a bitter aftertaste.
  • You can substitute rice flour with gram flour (besan) for a softer, bhajiya-like coating.
  • Store in an airtight container for up to 2 days, though best eaten fresh.
  • If you prefer it less crunchy, reduce the frying time by 2 minutes.

Serve with

Raw onion rings, lemon wedges, and chilled beverages.

Cook's note

Adding a squeeze of lemon juice immediately after frying cuts through the richness of the fat.
