Kerala Style Egg Roast
Hard-boiled eggs in a thick, spicy onion and tomato masala.

A classic breakfast or dinner accompaniment, Kerala Egg Roast (Mutta Roast) is famous for its thick, 'masala' coating dominated by caramelized onions. It is the standard pairing for Appams or Puttu in local 'Thattukadas' (street stalls). The secret lies in the slow browning of onions which provides a natural sweetness to balance the heavy punch of black pepper and ginger.
Ingredients
The Eggs
- 4-5 Hard-boiled eggs, peeled
- A pinch of turmeric and chili powder for searing
The Masala Base
- 3 large Red onions, very thinly sliced
- 1 large Tomato, finely chopped
- 1 tbsp Ginger-Garlic paste
- 2 Green chilies, slit
- 2 sprigs Curry leaves
Spices
- 1 tsp Kashmiri chili powder
- 1.5 tsp Coriander powder
- 1/2 tsp Turmeric powder
- 1/2 tsp Black pepper powder, freshly ground
- 1/2 tsp Garam masala
- 2 tbsp Coconut oil

Prepare the Eggs
Make 3-4 shallow vertical slits on each boiled egg. Heat 1 tsp oil in a pan, add a pinch of turmeric and chili powder, and lightly sear the eggs for 2 minutes until the outer skin is slightly crisp.

Caramelize Onions
Heat the remaining coconut oil in a wide pan. Add the sliced onions and a pinch of salt. Sauté on medium heat for 10-12 minutes, stirring frequently until they are deep golden brown.

Aromatics Addition
Add the ginger-garlic paste and green chilies. Sauté for 2-3 minutes until the raw smell of the paste is replaced by a sweet, savory aroma.

Tomato Softening
Stir in the chopped tomatoes and cook until they break down completely into a jammy consistency, merging with the onions.

Spice Bloom
Lower the heat and add all the spice powders (chili, coriander, turmeric, pepper). Toast the spices in the oil for 1 minute until fragrant, taking care not to burn them.

Create the Gravy
Add about 1/4 cup of hot water to the pan. This deglazes the pan and turns the dry spices and onions into a thick, luscious gravy (the 'roast' consistency).

Final Simmer
Add the seared eggs and the garam masala. Gently toss the eggs so the masala fills the slits and coats the surface. Simmer for 3-4 minutes on low heat.

Finishing Touch
Garnish with a generous handful of fresh curry leaves and a teaspoon of fresh coconut oil. Cover and let it rest for 5 minutes before serving to let the flavors settle.
Notes & variations
- The onions must be sliced very thin to ensure they melt into the masala properly.
- For a darker roast, increase the amount of black pepper and cook the onions longer.
- If the roast is too dry, add a tablespoon of water or coconut milk at the end.
- Store in an airtight container for up to 2 days; the flavor intensifies over time.

Serve hot with Appam, Idiyappam, or Malabar Parotta.

Searing the eggs with spices before adding them to the masala prevents them from tasting 'plain' inside the curry.
