Khageena is the quintessential Hyderabadi breakfast dish, reflecting the city's love for eggs and slow-cooked onions. Unlike a standard scramble, Khageena relies on a high ratio of onions to eggs, creating a sweet, caramelized base that balances the heat of the spices. It is a rustic, hearty dish often prepared in 'Deghs' for large family gatherings during Sunday brunches.
Ingredients
The Egg Base
- 5 Large organic eggs
- 1/2 tsp Salt (or to taste)
- 1/4 tsp Black pepper powder
The Onion Masala
- 3 Large red onions, finely sliced
- 3 tbsp Vegetable oil
- 1 tbsp Ginger-garlic paste
- 2 Green chilies, finely chopped
- 1/2 tsp Turmeric powder
- 1 tsp Kashmiri red chili powder
- 1 tsp Cumin powder
Finishing
- 1/2 cup Fresh coriander, chopped
- 1/4 cup Fresh mint leaves, torn
- 1/2 tsp Garam masala powder

Prepare the Onions
Peel and slice the onions as thinly as possible. In a wide, heavy-bottomed skillet, heat the vegetable oil over medium heat. Add the onions and a pinch of salt to draw out moisture.

Sauté to Golden
Sauté the onions for 10-12 minutes, stirring frequently. You are looking for a light golden-brown color, not deep brown. The onions should be soft, translucent, and slightly sweet.

Aromatize the Base
Add the ginger-garlic paste and chopped green chilies. Sauté for 2 minutes until the raw pungent smell of the garlic disappears and the mixture becomes fragrant.

Incorporate Spices
Lower the heat to minimum and add the turmeric, red chili powder, and cumin powder. Stir for 30 seconds to cook the spices in the oil without burning them. If the pan is too dry, add a splash of water.

Whisk the Eggs
While the spices cook, crack the eggs into a bowl and whisk them lightly with salt and pepper. You don't want them overly frothy, just well-incorporated.

Pour the whisked eggs into the center of the skillet over the onion mixture. Increase the heat to medium-low. Let the eggs set for about 30 seconds before moving them.

Turn off the heat, cover the pan with a lid, and let it sit for 2 minutes. The residual heat will finish cooking the eggs perfectly and allow the herbs to wilt and release their oils.

- Use red onions for the best flavor; white onions are too mild and watery for this dish.
- Do not skimp on the oil; it helps in the slow caramelization of the large volume of onions.
- For a tangier version, you can add one small finely chopped tomato after the ginger-garlic paste.
