Khamang Kakdi is a refreshing, crunchy salad that is a mainstay of the Maharashtrian 'Thali' in Mumbai. It serves as a cooling counterpoint to spicy main courses. Its distinctiveness comes from the 'Khamang' (savory/aromatic) tempering of mustard seeds and the textural contrast of crushed roasted peanuts.

Ingredients

Salad Base

  • 2 cups (300g) Cucumber, finely diced (peeled)
  • 1/4 cup (40g) Roasted peanuts, coarsely crushed
  • 2 tbsp (10g) Fresh coriander, finely chopped
  • 1/2 cup (40g) Fresh coconut, grated
  • 1 tsp (5g) Sugar
  • 1 tbsp (15ml) Lemon juice
  • Salt to taste

The Tempering (Tadka)

  • 1 tbsp (15ml) Oil or Ghee
  • 1/2 tsp (2.5g) Mustard seeds
  • 1/2 tsp (2.5g) Cumin seeds
  • 1/4 tsp (1.25g) Asafoetida (Hing)
  • 1-2 Green chilies, finely chopped
  • 5-6 Curry leaves

Method

    Prep the cucumber

    Peel the cucumbers and dice them into very small, uniform cubes (about 0.5 cm). If the seeds are large and watery, scrape them out before dicing to prevent the salad from becoming soggy.

    Salt and drain

    Lightly salt the diced cucumber and let it sit in a colander for 5 minutes. Gently squeeze out the excess water. This step is crucial to ensure the salad remains crunchy and doesn't sit in a pool of liquid.

    Mix the base

    In a large mixing bowl, combine the drained cucumber, grated coconut, chopped coriander, sugar, and lemon juice. Do not add the peanuts yet, as they will lose their crunch if they sit with the wet ingredients too long.

    Roast the peanuts

    Roast raw peanuts in a pan until the skins darken and they become fragrant. Cool completely, remove the skins, and crush them coarsely using a mortar and pestle. The texture should be gritty, not powdery.

    Prepare the tempering

    Heat oil or ghee in a small tadka pan over medium heat. Add mustard seeds; when they start to crackle, add cumin seeds, hing, green chilies, and curry leaves.

    Sizzle the aromatics

    Let the chilies blister slightly in the oil for 30 seconds. The curry leaves should become crisp but remain green. This hot oil infusion carries the spicy flavor throughout the salad.

    Combine

    Pour the hot tempering directly over the cucumber mixture. The heat will slightly wilt the coriander and release the aroma of the coconut. Stir well to coat every piece of cucumber.

    Final texture

    Just before serving, fold in the crushed roasted peanuts. This ensures maximum crunch against the soft, cool cucumber.

    Seasoning check

    Taste and add a final pinch of salt if needed. The balance should be a harmony of sweet (sugar), sour (lemon), spicy (chilies), and salty.

Notes & variations

  • Add the salt and peanuts only at the moment of serving to keep it fresh.
  • You can add finely chopped de-seeded tomatoes for extra color and tang.
  • Using ghee for the tempering adds a richer, traditional flavor than vegetable oil.
  • Persian or English cucumbers are best as they have fewer seeds.

Serve as a side dish with Varan Bhat (dal and rice) or Pollo (roti).

Squeeze the cucumbers firmly but gently; you want to remove excess moisture without bruising the flesh.
