About this dish

Originating from the misty hills of Coorg (Kodagu), this crab curry is a seasonal delicacy often enjoyed during the monsoon. The soul of this dish is 'Kachampuli', a dark, fermented vinegar made from Garcinia gummi-gutta, which provides a unique fruity acidity found nowhere else. It is a rustic, spicy preparation that reflects the hunting and gathering traditions of the Kodava community.

Ingredients

The Main Ingredient

  • 1 kg Mud Crabs, cleaned and halved
  • 1 tsp Turmeric powder
  • 1 tsp Salt

The Kodava Masala

  • 1 cup Fresh coconut, grated
  • 2 tbsp Coriander seeds
  • 1 tsp Cumin seeds
  • 1 tsp Peppercorns, whole
  • 8 Dry red chilies (Guntur variety for heat)
  • 6 Cloves Garlic
  • 1 inch Ginger, chopped
  • 1 large Onion, roughly chopped

The Gravy and Sourness

  • 3 tbsp Oil (preferably coconut or sunflower)
  • 1/2 tsp Mustard seeds
  • 2 sprigs Curry leaves
  • 2 medium Onions, finely sliced
  • 1 tsp Kachampuli (or tamarind paste if unavailable)
  • Salt to taste

Method

    Marinate the Crabs

    Rub the cleaned crab pieces with turmeric and salt. Let them sit for 20 minutes; this helps remove any 'fishy' odor and allows the salt to penetrate the thick shells before they are sealed by cooking.

    Dry Roast the Spices

    In a heavy skillet, dry roast the coriander seeds, cumin, peppercorns, and red chilies over medium-low heat. Roast for about 5 minutes until the peppercorns start to smell pungent and the coriander seeds turn a shade darker. Do not burn the chilies, as this will make the curry bitter.

    Prepare the Wet Paste

    In the same skillet, add a teaspoon of oil and sauté the roughly chopped onions, ginger, garlic, and coconut until the coconut turns light brown. Combine this with the roasted dry spices and grind into a smooth, thick paste using very little water. The paste should be aromatic and slightly oily.

    Sauté the Aromatics

    Heat 3 tablespoons of oil in a large, wide pot (to allow crabs to sit in a single layer). Splutter the mustard seeds and curry leaves. Add the finely sliced onions and sauté for 8-10 minutes until they are dark golden brown, almost caramelized.

    Cook the Masala

    Add the ground masala paste to the browned onions. Cook on medium heat for 5-7 minutes, stirring constantly, until the oil begins to separate from the sides of the masala. This 'bhuna' process is essential for deep flavor development.

    Braise the Crabs

    Gently add the crab pieces to the pot. Toss them in the masala for 3 minutes to coat every crevice. Add 2 cups of hot water, cover with a tight-fitting lid, and simmer for 15-18 minutes. The crab shells should turn a vibrant orange-red.

    The Kachampuli Finish

    Once the crabs are cooked, drizzle the Kachampuli over the curry. Stir gently and simmer for another 2 minutes. The gravy will thicken and turn a shade darker. Taste and adjust salt; the Kachampuli will sharpen all the other spices instantly.

Notes & variations

  • Kachampuli is very potent; start with half a teaspoon and add more only if needed.
  • Cracking the crab claws slightly with a mallet before cooking allows the juices to seep in.
  • If using sea crabs instead of mud crabs, reduce cooking time by 5 minutes as they are more delicate.
  • Leftover curry tastes phenomenal the next day when the shells have fully infused the gravy.

Serve with

Serve piping hot with Akki Oti (Coorgi rice rotis) or steamed Kadambuttu (rice balls).

Cook's note

Always use hot water for the gravy to keep the crab meat tender; cold water can make the meat stick to the shell.
