About this dish

Kombdi Vade is the quintessential bread of the Konkan coast, traditionally served alongside spicy Malvani chicken curry. Unlike standard puris, these are made from a fermented-style dough of rice and lentils, flavored with bhajani (toasted flour). They are prized for their unique 'poori-like' puffiness but with a denser, more savory crumb.

Ingredients

The Flour Mix (Bhajani)

  • 250g (2 cups) Rice flour
  • 60g (1/2 cup) Black gram (Urad Dal) flour
  • 30g (1/4 cup) Bengal gram (Chana Dal) flour
  • 1 tsp Cumin seeds, crushed
  • 1 tsp Coriander seeds, crushed

Dough Seasoning

  • 1/2 tsp Turmeric powder
  • 1 tsp Salt
  • 200ml Warm water, for kneading
  • 1 tbsp Oil, for the dough

For Frying

  • 500ml Vegetable oil, for deep frying
  • Banana leaf or plastic sheet, for patting

Method

    Mix the Flours

    In a large mixing bowl, sift together the rice flour, urad dal flour, and chana dal flour. Add the turmeric, salt, and the crushed cumin and coriander seeds. Mix thoroughly to distribute the aromatics.

    Knead the Dough

    Gradually add warm water to the flour mixture. Knead into a firm, non-sticky dough. The warm water helps gelatinize the rice starch, making the vades soft inside and crispy outside.

    Resting Period

    Cover the dough with a damp cloth and let it rest for at least 30 minutes. This allows the flours to hydrate properly, which prevents the vades from cracking when fried.

    Prepare for Frying

    Heat oil in a deep kadai (wok) over medium-high heat. To test if it's ready, drop a tiny piece of dough; it should sizzle and rise to the surface immediately without browning too fast.

    Shape the Vade

    Divide the dough into lemon-sized balls. Grease a piece of banana leaf or a plastic sheet with oil. Place a ball on it and flatten it with your fingers into a 3-inch disc about 4mm thick.

    The Hole Technique

    Traditionally, a small hole is poked in the center of the disc with a finger. This ensures even cooking and helps the vade rise uniformly in the hot oil.

    Deep Frying

    Gently peel the vade off the leaf and slide it into the hot oil. Press down lightly with a slotted spoon to encourage puffing. Fry for 1-2 minutes until the bottom is golden brown.

    Flip and Drain

    Flip the vade carefully and fry the other side for another minute. Once both sides are a deep golden hue and the exterior feels crisp, remove and drain on paper towels.

Notes & variations

  • If you don't have urad dal flour, soak and grind whole urad dal to a fine paste and mix into the rice flour.
  • Keep the dough covered at all times to prevent it from drying out and becoming brittle.
  • Store leftovers in an airtight container; they stay soft for 24 hours.
  • For a spicy kick, add a teaspoon of red chili powder to the dough mix.

Serve with

Malvani Chicken Curry (Kombdi Rassa) and sliced red onions with lemon.

Cook's note

Do not roll these with a rolling pin; the pressure from fingers creates the authentic uneven, bubbly texture.
