Kumbakonam Kadappa
A unique potato and moong dal gravy served with hot idlis.

About this dish
A specialty of the Tanjore district, specifically Kumbakonam, this dish is a creamy, mild gravy that bridges the gap between a Sambar and a Kurma. It is the quintessential accompaniment for hot idlis and dosas in this region. The use of yellow moong dal and a fresh coconut-poppy seed paste gives it a luxurious mouthfeel without the heavy spice load of other South Indian curries.

- 100g (1/2 cup) Split yellow moong dal
- 2 large Potatoes, boiled, peeled and crumbled
- 1 large Onion, thinly sliced
- 2 Green chilies, slit
- 1/2 tsp Turmeric powder
- 1 tbsp Lemon juice
Coconut Paste
- 1/2 cup Grated fresh coconut
- 1 tsp Fennel seeds
- 1 tsp Poppy seeds (Khus Khus), soaked in warm water
- 2-3 Green chilies
- 2 Garlic cloves
Tempering
- 1 tbsp Oil
- 1/2 tsp Mustard seeds
- 1 inch Cinnamon, 2 Cloves
- A sprig of Curry leaves

Cooking the Dal
Pressure cook the moong dal with 1.5 cups of water and turmeric until it is completely soft and mashable. Whisk it into a smooth slurry and set aside.

Preparing the Paste
Grind the coconut, fennel, soaked poppy seeds, garlic, and green chilies into a very fine, smooth paste using a little water.

Initial Tempering
Heat oil in a heavy pot. Add mustard seeds; once they pop, add the cinnamon, cloves, and curry leaves. The whole spices provide a subtle background aroma.

Sautéing Aromatics
Add the sliced onions and slit green chilies. Sauté until the onions are translucent but not browned; you want to maintain a light color for the gravy.

Combining Bases
Pour in the mashed dal and the crumbled potatoes. The potatoes should be broken by hand into chunks of varying sizes, not mashed smooth, to add texture.

Simmering with Coconut
Add the prepared coconut paste and 1 cup of water. Add salt to taste and stir well to combine all elements.

Developing Flavor
Simmer the mixture on low heat for 5-7 minutes. The gravy will thicken as the starch from the potatoes and dal meld with the coconut.

Final Touch
Switch off the heat and stir in the fresh lemon juice. This acidity is vital to cut through the richness of the coconut and dal.

Garnish with fresh coriander leaves and let it sit for 5 minutes before serving so the flavors settle.
Notes & variations
- If poppy seeds are unavailable, substitute with 4-5 soaked cashews.
- The consistency should be pourable, like a thick soup; add warm water if it gets too thick.
- Do not boil for too long after adding the coconut paste or the oil might separate.
- Potatoes should be boiled until just tender so they don't dissolve completely.

Perfectly paired with hot, fluffy Malligai Poo Idlis or crispy Ghee Roast Dosa.

The lemon juice must be added after turning off the heat to prevent the dal from becoming bitter.
