Luqma Seviyan
Dry, sweetened vermicelli flavored with saffron and nuts.

Luqma Seviyan is a dry, sweet vermicelli delicacy synonymous with Hyderabadi celebratory breakfasts, particularly during Eid. Unlike the milky Sheer Khurma, this version relies on a sugar syrup (qiwam) to glaze each strand of vermicelli, making them distinct and 'khila-khila' (separated). The name 'Luqma' refers to a 'morsel', emphasizing its rich, calorie-dense nature meant to be savored in small bites.
Ingredients
The Base
- 200g fine wheat vermicelli (Seviyan), broken into 2-inch pieces
- 100g (1/2 cup) pure ghee
- 200g (1 cup) granulated sugar
- 250ml (1 cup) hot water
- 1/2 tsp saffron strands, soaked in 1 tbsp warm milk
Aromatics and Garnishes
- 4 green cardamom pods, slightly crushed
- 25g (2 tbsp) sliced almonds
- 25g (2 tbsp) sliced pistachios
- 25g (2 tbsp) chironji (charoli) seeds
- 50g unsweetened mawa (khoya), crumbled

Roast the nuts
Heat 1 tbsp of ghee in a heavy-bottomed pan over low heat. Fry the almonds, pistachios, and chironji for 2 minutes until golden and aromatic, then remove and set aside to maintain crunch.

Golden roasting of Seviyan
Add the remaining ghee to the same pan. Add the broken vermicelli and roast on medium-low heat, stirring constantly for 5-7 minutes until they turn an even deep golden brown; uneven roasting will result in a sticky texture later.

Prepare sugar syrup
In a separate pot, dissolve sugar in 250ml water over medium heat. Bring to a boil and simmer for 4 minutes until you achieve a half-string consistency (slightly sticky but not thick).

Infuse saffron
Stir the saffron-milk mixture and crushed cardamom into the sugar syrup. The syrup should turn a beautiful golden-orange hue and smell intensely floral.

Combine syrup and vermicelli
Slowly pour the hot sugar syrup over the roasted vermicelli. Be careful as it will bubble and steam vigorously; reduce heat to the lowest setting immediately.

Absoprtion phase
Gently fold the vermicelli to ensure they are submerged. Cover the pan with a tight-fitting lid and cook for 5-6 minutes on low heat until 90% of the liquid is absorbed.

The Dum process
Sprinkle half of the crumbled mawa and fried nuts over the top. Cover again, perhaps with a cloth under the lid (Dum), and cook for another 3-4 minutes until the moisture is completely gone.

Resting period
Turn off the heat but do not open the lid for at least 5-10 minutes. This resting phase allows the steam to finish cooking the core of the vermicelli, ensuring they remain separate and firm.

Fluff and garnish
Open the lid and gently fluff the seviyan with a fork, taking care not to break the delicate strands. Transfer to a serving platter and garnish with the remaining mawa and nuts.
Notes & variations
- Use 'Ek-bambi' or very fine vermicelli for the most authentic Hyderabadi texture.
- Adjust the sugar ratio to 1:1 with vermicelli for a standard sweetness, or 1:1.5 for a traditional rich taste.
- Khoya (mawa) can be substituted with milk powder mixed with a little cream if unavailable.
- This dish can be served warm or at room temperature; it does not freeze well due to texture changes.
Serve with
A side of thick malai (clotted cream) or savory 'Dahi bade' to balance the sweetness.
Cook's note
Adding a tiny pinch of salt to the sugar syrup enhances the depth of the saffron and ghee flavors.
