About this dish

Known as the 'Mother of All Drinks' in the temple city of Madurai, Paruthi Paal is a traditional health tonic made from cottonseed milk. Historically served by street vendors as a nourishing evening beverage, it is believed to aid digestion and provide cooling properties. The drink is a complex interplay of nutty cottonseeds, spicy dried ginger, and deep, earthy jaggery.

Ingredients

Base Ingredients

  • 1 cup Raw Cottonseeds (Paruthi vidhai)
  • 1/4 cup Raw rice (Sona Masuri or Ponni)
  • 1.5 cups Dark Jaggery, crushed
  • 1 liter Water

Flavorings and Thickener

  • 1/2 cup Freshly grated coconut
  • 1 tsp Cardamom powder
  • 1 tsp Dry ginger powder (Sukku)
  • 1/2 tsp Licorice powder (Athimadhuram - optional but authentic)
  • 1/4 tsp Salt

Method

    Soak the seeds and rice

    Wash the cottonseeds thoroughly multiple times to remove any lint or debris. Soak the cottonseeds and raw rice together in plenty of water for at least 8 hours, or ideally overnight. This softening is crucial to extract the maximum 'milk' from the tough hulls.

    Extract the milk

    Drain the soaking water and grind the seeds and rice in a high-speed blender with 2 cups of fresh water. Grind for 3-4 minutes until you achieve a thick, white milky consistency. Strain this through a fine muslin cloth or nut milk bag into a heavy-bottomed pot, squeezing hard to extract all liquid.

    Second extraction

    Return the leftover pulp to the blender and add another 1 cup of water. Blend again for a minute and strain once more into the same pot. Discard the dry fibrous remains of the cottonseeds.

    Prepare jaggery syrup

    In a separate pan, heat the crushed jaggery with 1/2 cup of water. Stir until completely melted and it starts to bubble. Strain the syrup through a fine mesh sieve to remove any sand or impurities commonly found in artisanal jaggery; set aside.

    Cook the cottonseed milk

    Place the pot with the extracted milk on medium heat. It is vital to stir constantly using a long-handled spoon to prevent the rice solids from settling and burning at the bottom. Cook for 12-15 minutes until the raw smell of the seeds disappears and the liquid thickens slightly.

    Incorporate jaggery

    Slowly pour the strained jaggery syrup into the simmering milk while stirring continuously. The color will change from a milky white to a beautiful tan or light brown. Maintain a medium-low heat to avoid curdling.

    Add spices and coconut

    While the mixture is simmering, grind the fresh coconut with a little water to a very smooth paste. Add this coconut paste, cardamom powder, dry ginger powder, and salt to the pot. The salt is essential to highlight the sweetness of the jaggery.

    Final simmer

    Continue to cook for another 5-7 minutes on low heat. The drink should have the consistency of a thin custard or thick soup. Taste for spice; the dry ginger should provide a noticeable but pleasant throat-warming sensation.

    Serve warm

    Turn off the heat. Pour the Paruthi Paal into tumblers. It is best enjoyed piping hot, especially during the monsoon or winter months, though it can be served lukewarm as well.

Notes & variations

  • Cottonseeds must be food-grade; ensure they are free from pesticides commonly used in textile cotton farming.
  • Adjust jaggery quantity based on the darkness and sweetness of your batch.
  • The rice acts as a thickening agent; don't skip it or the drink will be too watery.
  • This drink does not store well for long; consume within 6-8 hours for best flavor.

If the drink becomes too thick upon cooling, dilute with a little warm coconut milk or water before reheating.
