Meethi Seviyan Punjabi Style

Meethi Seviyan is a beloved Punjabi dessert often prepared during Eid or festive mornings. Unlike the milky 'Kheer' version, this is a dry, sautéed preparation where each strand of vermicelli is coated in a sugary glaze. It represents the Punjabi love for 'bhuna' (toasted) flavors and the generous use of desi ghee.
Ingredients
Main Components
- 150g (1.5 cups) Wheat vermicelli (thin)
- 2 tbsp Ghee
- 100g (1/2 cup) Sugar (adjust to taste)
- 300ml (1.25 cups) Hot water
- 1/2 tsp Green cardamom powder
Garnish and Flavor
- 10-12 Almonds, slivered
- 10-12 Cashews, halved
- 1 tbsp Raisins
- A few strands of Saffron (optional)
Method

Toast the Nuts
Heat 1/2 tbsp of ghee in a non-stick pan over medium heat. Fry the almonds, cashews, and raisins until the nuts are golden and raisins plump up. Remove and set aside.

Roast the Seviyan
Add the remaining ghee to the same pan. Add the vermicelli (break them slightly if they are very long). Roast on medium-low heat for 3-5 minutes, stirring constantly.

Achieve Color
Continue roasting until the vermicelli turns a deep, uniform golden-brown. Watch closely as they can burn in seconds; the aroma should be nutty and toasted.

Hydrate
Carefully pour the hot water into the pan. Be wary of the steam splash. Increase the heat to medium and bring to a simmer.

Softening the Strands
Cook the vermicelli in the water for 3-4 minutes until the water is almost absorbed and the strands are soft but not mushy. They should be 'al dente'.

Sweeten the Dish
Add the sugar and cardamom powder. Once the sugar melts, the mixture will become slightly watery again. This is normal.

The Glaze
Continue cooking on medium heat, stirring gently, until the sugar syrup is absorbed and the seviyan looks glossy and dry.

Infuse Saffron
If using, add the saffron strands soaked in a teaspoon of warm milk now. This adds a royal yellow tint and a floral aroma.

Steam (Optional)
Cover the pan for 2 minutes on the lowest heat setting. This ensures the sweetness reaches the core of each strand.

Final Garnish
Add the fried nuts and raisins back into the pan. Toss once and turn off the heat. Serve warm or at room temperature.
Notes & variations
- If using pre-roasted vermicelli, still roast them in ghee for 1-2 minutes for better flavor.
- You can substitute half the water with milk for a richer, creamier texture.
- Add a pinch of salt to the water to enhance the sweetness of the sugar.
- Stored in an airtight container, it stays good for 2-3 days in the fridge.

Serve as a standalone dessert or with a scoop of vanilla ice cream for a modern twist.

Always use hot water to hydrate the seviyan; cold water makes the starch gummy and the strands will stick together.
