Mumbai Kala Khatta Slush

Kala Khatta is the undisputed king of Mumbai street flavors, famously served as 'Gola' (shaved ice) at Juhu Beach. This slush version brings that nostalgic, tangy, and salty flavor into a modern format. The base is Jamun (black plum), which gives the drink its signature deep purple hue and unique astringent-sweet profile.
Ingredients
For the Kala Khatta Syrup
- 200g Fresh Jamun (Black Plum) or 1/2 cup Jamun pulp
- 100g (1/2 cup) Sugar
- 1 tsp Black salt (Kala Namak)
- 1 tsp Roasted cumin powder
- 1/2 tsp Dry ginger powder (Sonth)
- 1 tbsp Lemon juice
- A pinch of Citric acid (optional for extra tang)
For the Slush
- 4 cups Crushed ice or ice cubes
- 2 tbsp Mint leaves for garnish
- Extra pinch of Chaat Masala

Prepare the jamun pulp
If using fresh jamun, wash them and remove the seeds. Blend the flesh with a splash of water into a smooth puree. Straining is optional, but for a smooth slush, pass it through a sieve to remove any skin fragments.

Simmer the syrup
In a small saucepan, combine the jamun pulp and sugar. Cook over medium heat for 5-6 minutes until the sugar dissolves and the mixture thickens into a glossy, dark purple syrup. The heat helps concentrate the natural tannins of the fruit.

Spice infusion
Stir in the black salt, roasted cumin powder, and dry ginger powder. These spices are the 'Kala' (black/spiced) in Kala Khatta, providing the savory contrast to the sweet fruit. Mix well for 1 minute then remove from heat.

Add the acidity
Once the syrup has cooled slightly, stir in the lemon juice. The acid will react with the jamun pigments, making the purple color even more vibrant and providing the 'Khatta' (sour) punch.

Chill the syrup
Place the syrup in the refrigerator until it is completely cold. Using warm syrup on ice will result in a watery drink rather than a slush. This syrup can be made days in advance.

Prepare the ice
Place 4 cups of ice cubes in a high-powered blender. Pulse the ice until it reaches a snowy, crushed consistency. Be careful not to over-blend into water; you want tiny granules of ice that will hold the syrup.

Assemble the slush
Add 4-5 tablespoons of the chilled Kala Khatta syrup to the blender with the crushed ice. Pulse just 2 or 3 times to marble the syrup through the ice. The mixture should be thick, spoonable, and freezing cold.

Flavor adjustment
Taste a small spoonful. If it’s too tart, add a splash of plain sugar syrup; if too sweet, add a pinch more black salt. The balance should be aggressively tangy and salty-sweet.

Final presentation
Scoop the slush into chilled glasses. Sprinkle a tiny pinch of chaat masala on top and garnish with a fresh mint sprig. Serve immediately with a thick straw and a spoon.
Notes & variations
- If Jamuns are out of season, you can use high-quality commercial Jamun juice reduced with sugar.
- For a 'boozy' adult version, a splash of vodka or white rum pairs excellently with these flavors.
- Don't skip the roasted cumin; it provides the 'street' aroma that defines Mumbai Kala Khatta.
- Use a glass or ceramic bowl for the syrup to avoid staining from the intense purple pigments.
