Dudh Masala is a nostalgic beverage, often found at Mumbai's iconic dairies like Parsi Dairy Farm. It is particularly popular during festivals like Kojagiri Purnima and winters. This isn't just flavored milk; it's a slow-reduced, nut-studded elixir that is as much a dessert as it is a drink.
Ingredients
The Milk Base
- 1 liter Full-fat buffalo milk
- 1/4 cup Sugar (adjust to taste)
- 15-20 Saffron strands (Kesar), soaked in 2 tbsp warm milk
The Masala (Grind Coarsely)
- 15 Almonds, blanched and peeled
- 15 Pistachios, shelled
- 10 Cashews
- 1/2 tsp Cardamom powder
- 1/4 tsp Nutmeg powder
- 1/8 tsp Mace powder (Javitri)
Garnish
- 1 tbsp Slivered pistachios
- 1 tbsp Slivered almonds
- Dried rose petals (optional)

Boil the Milk
In a heavy-bottomed wide pan (kadai), pour the milk and bring to a boil over medium heat. Using a wide pan increases the surface area for faster reduction.

Slow Reduction
Once boiled, lower the heat. Let the milk simmer for 15-20 minutes, stirring occasionally and scraping the 'malai' (cream) from the sides back into the milk. This creates a rich texture.

Prepare Nut Masala
While milk simmers, pulse the almonds, pistachios, and cashews in a grinder to a coarse powder. You want tiny bits of nuts for crunch, not a fine flour.

Infuse Saffron
Add the soaked saffron milk to the boiling pot. The milk will slowly transform from white to a beautiful pale golden hue.

Sweeten and Spice
Add the sugar and stir until completely dissolved. Then, add the coarse nut masala, cardamom powder, nutmeg, and mace. The nutmeg and mace provide that signature Mumbai dairy aroma.

The Final Simmer
Continue to cook for another 5-10 minutes. The milk should have reduced by about 20-25% and look noticeably thicker and creamier.

Frothing (Optional)
For a street-style finish, pour the milk from a height between two vessels (or use a hand blender for 10 seconds) to create a layer of froth on top.

Cooling or Heating
If serving hot, pour into glasses immediately. If serving cold, let it cool to room temperature, then refrigerate for at least 4 hours. The flavors intensify as it chills.

Top with slivered nuts and dried rose petals just before serving to maintain the crunch of the garnish.
Notes & variations
- Use buffalo milk for the highest fat content and richest mouthfeel.
- Don't skip the mace; it's the secret ingredient that distinguishes Mumbai masala milk from others.
- Store any leftover milk in an airtight glass bottle for up to 2 days in the fridge.
- For a healthier version, substitute sugar with jaggery powder, but add it only after turning off the heat.
