Murg Ka Farcha is a beloved appetizer in the Hyderabadi culinary landscape, influenced by the Parsi community's unique frying techniques. Unlike standard fried chicken, this Deccani version uses a thick egg 'lace' coating that creates a distinctively crisp, airy exterior while keeping the meat succulent. It is typically served at weddings and festive Dawat (feasts) as a starter that bridges the gap between Irani and Nizam's courtly cuisines.
Ingredients
The Marinade
- 500g Chicken breast or thighs, cut into 3-inch chunks
- 1 tbsp Ginger-garlic paste
- 1 tsp Turmeric powder
- 2 tsp Kashmiri red chili powder
- 1 tsp Garam masala powder
- 1 tbsp Lemon juice
- 1/2 tsp Salt
The Coating
- 3 large Eggs, whisked until frothy
- 4 tbsp Semolina (Rava) for dredging
- 2 tbsp Rice flour
- 250ml Vegetable oil for deep frying
- 1 tsp Fresh black pepper, crushed

Marinating the Chicken
In a large glass bowl, combine the chicken chunks with ginger-garlic paste, turmeric, chili powder, garam masala, salt, and lemon juice. Massage the spices into the meat thoroughly for at least 3 minutes to ensure penetration. Allow this to rest at room temperature for 30 minutes, or refrigerate for 2 hours if time permits for deeper flavor.

Preparing the Dredge
Mix the semolina and rice flour on a wide plate, seasoning it with a pinch of salt and crushed black pepper. This dry mix provides the necessary structural base for the egg coating to cling to. Ensure the mixture is uniform so the crust doesn't clump during the frying process.

Whisking the Eggs
In a deep bowl, beat the three eggs vigorously with a fork until they are light, airy, and pale yellow. The air bubbles are crucial as they expand in the hot oil to create the 'farcha' or lacy texture characteristic of the dish. Do not over-salt the eggs, as it can make them watery.

Heating the Oil
Pour the vegetable oil into a heavy-bottomed kadai or deep skillet and heat over medium-high flame. The oil is ready when a small drop of egg sizzles and rises to the surface immediately (approx. 180°C/350°F). If the oil is too cold, the chicken will be greasy; if too hot, the coating will burn before the meat cooks.

Initial Coating
Take a piece of marinated chicken and roll it firmly in the semolina-rice flour mixture until fully covered. Shake off any excess flour, as too much will lead to a gritty texture. This layer acts as a primer, ensuring the egg wash doesn't slip off the smooth meat surface.

The Egg Dip
Submerge the flour-coated chicken piece into the whisked eggs, ensuring it is dripping with the mixture. Quickly lift it and move it toward the hot oil, allowing a small trail of egg to follow. Work in batches of 3-4 pieces to avoid crowding the pan and dropping the oil temperature.

Deep Frying
Carefully lower the chicken into the oil. Fry on medium heat for about 4-5 minutes per side. You will see the egg expand into a golden, bubbly crust. Turn the pieces gently using a slotted spoon once the bottom side feels firm and appears golden brown.

Monitoring Doneness
Continue frying until the chicken reaches an internal temperature of 75°C (165°F) or until the exterior is a deep reddish-gold. The aroma of toasted spices and fried egg should be prominent. Avoid poking the chicken frequently, which can rupture the delicate lacy coating.

Remove the chicken using a slotted spoon and place it on a wire rack or paper towels to drain excess oil. Let it rest for 2 minutes before serving. Resting allows the juices to redistribute inside the meat, ensuring a moist bite underneath the crunch.

- For a more authentic Parsi-Deccani cross, add a pinch of cinnamon to the marinade.

- You can substitute semolina with breadcrumbs, though the texture will be less traditional.
