Dilli Bazaar Seekh Kebab

About this dish
The Dilli Bazaar Seekh Kebab is a legacy of the Qureshi butchers of Old Delhi. Unlike the smoother versions found elsewhere, these are robust, featuring a coarser grind of meat and a potent blend of 'garam' (warm) spices. The secret lies in the fat-to-meat ratio and the double-mincing technique which ensures the kebab stays on the skewer without falling off.
Ingredients
Meat Base
- 500g Mutton mince (finely ground, 20% fat content)
- 1 tablespoon Papaya paste (raw, with skin) for tenderizing
- 2 tablespoons Ginger-garlic paste
- 2 medium Onions, finely chopped and squeezed to remove all water
Spice Blend
- 3-4 Green chilies, finely minced
- 1 teaspoon Clove powder
- 1 tablespoon Roasted chickpea flour (besan)
- 1 teaspoon Red chili flakes
- 1 teaspoon Garam masala
- 1/2 cup Fresh coriander, finely chopped
- Salt to taste
Basting
- 50g Melted butter or ghee
- 1 teaspoon Chaat masala for finishing

Prepare the Mince
Ensure the mutton is dry. If it's wet, hang it in cheesecloth for 30 minutes. Mix the mince with raw papaya paste and ginger-garlic paste. Let it marinate for at least 30 minutes; the enzymes in the papaya will break down the tough fibers.

Remove Moisture
This is the most critical step. Take the chopped onions in a cloth and squeeze until every drop of juice is gone. Wet onions will make the kebabs fall off the skewers.

Incorporate Spices
Add the dry onions, green chilies, clove powder, chili flakes, and salt to the meat. The clove powder is the signature 'Dilli' scent—fragrant and slightly medicinal.

Binding
Add the roasted chickpea flour (besan). Knead the meat mixture vigorously for 8-10 minutes, similar to bread dough. You are looking for the meat to become sticky and develop white strands of protein (myosin).

Chill the Mix
Place the mixture in the refrigerator for 1 hour. Chilled fat makes the meat easier to mold and helps it grip the metal skewers.

Shape the Kebabs
Dampen your hands with cool water. Take a lemon-sized portion of meat and thread it onto a square or flat metal skewer. Press and stretch the meat along the skewer to form a long, even cylinder about 6 inches long.

Prepare the Heat
Prepare a charcoal grill until the coals are glowing red with a thin layer of grey ash. If using an oven, preheat to its maximum setting (250°C+) with the broiler/grill mode on.

Grill the Meat
Place skewers over the heat. Let them sear for 2-3 minutes without touching so the exterior sets. Rotate frequently to ensure even browning. The total cooking time should be 8-10 minutes.

Baste and Finish
During the last 2 minutes of grilling, brush the kebabs generously with melted butter or ghee. This creates a glossy finish and prevents the lean meat from drying out. The internal temperature should reach 70°C.

Removal
Use a piece of roomali roti or a cloth to gently slide the kebab off the skewer. Be careful not to break them. Sprinkle immediately with chaat masala and a squeeze of lime.
Notes & variations
- If you don't have a grill, use a cast iron griddle, but you will miss the smoky flavor.
- Mutton fat (riwaaz) is essential; if the meat is too lean, the kebabs will be rubbery.
- Do not over-marinate with papaya paste beyond 1 hour, or the meat will turn to mush.
- For a smoky effect indoors, use the 'dhungar' method with a hot coal and ghee in the bowl of raw meat.
Serve with
Sliced red onions, mint-yogurt chutney, and hot Roomali Roti.
Cook's note
Always grind your own cloves fresh; pre-ground clove powder loses its essential oils very quickly.
