About this dish

This is a 'Turant' (instant) style pickle favored in Nizami households as a quick accompaniment to rich biryanis. Unlike sun-dried pickles, this version uses a light blanching technique and a mustard-vinegar base, offering a crunchy, sharp contrast to fatty meats. It represents the sophisticated simplicity of Hyderabadi side dishes.

Ingredients

The Vegetable

  • 300g Carrots, peeled and cut into 2-inch batons
  • 1 tsp Salt
  • 1/2 tsp Turmeric Powder

Pickling Spices

  • 2 tbsp Mustard Seeds (Rai), coarsely ground
  • 1 tsp Fenugreek Seeds (Methi), roasted and powdered
  • 2 tbsp Kashmiri Red Chili Powder
  • 1/4 tsp Asafoetida (Hing)

Liquid and Tempering

  • 100ml Mustard Oil
  • 2 tbsp White Vinegar
  • 1 tsp Kalonji (Nigella seeds)
  • 4-5 Dried Red Chilies

Method

    Blanch the Carrots

    Bring a pot of water to a boil. Drop the carrot batons in for exactly 2 minutes; they should be slightly tender but still retain a distinct snap.

    Dry Thoroughly

    Drain the carrots and spread them on a clean kitchen towel. Pat them completely dry; any residual moisture will reduce the shelf life of the pickle.

    Spice Coating

    In a large glass bowl, toss the dried carrots with salt, turmeric, mustard powder, fenugreek powder, and chili powder until evenly coated.

    Heat the Oil

    Heat the mustard oil in a small pan until it reaches its smoking point. This removes the harsh raw pungency of the oil.

    The Tempering

    Turn off the heat and let the oil cool for 2 minutes. Add the hing, kalonji, and dried red chilies; they should sizzle gently without burning.

    Combine

    Pour the spiced oil over the carrots. The warm oil will help release the flavors of the spice powders already on the carrots.

    Add Acidity

    Once the mixture has cooled slightly, stir in the vinegar. This acts as both a preservative and a souring agent.

    Maceration

    Transfer the mixture to a sterilized glass jar. While it can be eaten immediately, the flavors develop significantly after 24 hours.

Notes & variations

  • Ensure all utensils and jars are bone-dry to prevent mold.
  • You can add cauliflower florets or green chilies along with carrots for a mixed version.
  • Keep refrigerated to maintain the crunch of the carrots for up to 2 weeks.
  • If you prefer it less spicy, reduce the chili powder and increase the mustard powder.

Cook's note

Roasting the fenugreek seeds before powdering is essential to remove bitterness and add a nutty aroma.
