Pacha Moru

About this dish
Pacha Moru is the ultimate Keralite comfort food, often served at the end of a heavy 'Sadhya' (feast) or as a quick lunch staple. It is a raw or barely-warmed tempered buttermilk that aids digestion in the tropical humidity. Unlike 'Moru Kachiyathu' which is fully cooked, Pacha Moru relies on the freshness of raw yogurt and the punch of crushed aromatics.
Ingredients
The Buttermilk Base
- 2 cups Thick yogurt (curd)
- 1.5 cups Water
- 1/2 tsp Salt
- 1/4 tsp Turmeric powder
The Crushed Aromatics
- 1-inch piece Ginger, finely minced
- 3 Green chilies, slit or crushed
- 4 Small shallots, finely chopped
The Tempering (Tadka)
- 1 tbsp Coconut oil
- 1/2 tsp Mustard seeds
- 1/4 tsp Fenugreek seeds (Uluva)
- 2 Dried red chilies, broken
- 1 sprig Curry leaves

Whisk the yogurt
In a large bowl, whisk the yogurt and salt until completely smooth with no lumps. Gradually add water to reach a thin, pourable consistency similar to heavy cream.

Season the base
Stir in the turmeric powder. The liquid should turn a pale, appetizing yellow. Add the crushed ginger, green chilies, and shallots directly into the cold buttermilk and mix well.

Prepare the tempering
Heat coconut oil in a small pan (tadka ladle) over medium heat. Add mustard seeds and let them pop. Add the fenugreek seeds and fry until they turn a dark reddish-brown, being careful not to burn them or they will become bitter.

Infuse the oil
Add the dried red chilies and curry leaves to the oil. The leaves will crackle and release their oils into the fat. Turn off the heat immediately.

Combine and warm
Pour the hot tempering over the buttermilk mixture. For a 'Pacha' (raw) version, serve as is. For a warm version, place the bowl over a low flame for exactly 60 seconds, stirring constantly.

Monitor the heat
If warming, ensure the buttermilk never reaches a simmer. The moment you see tiny wisps of steam, remove it from the heat. High heat will cause the yogurt to curdle and separate.

Final resting
Let the dish sit for 5 minutes so the flavors of the raw ginger and chilies infuse into the buttermilk before serving.
Notes & variations
- Use slightly sour yogurt for a more authentic, refreshing taste.
- Do not skip the fenugreek seeds; they provide the characteristic nutty aroma of Kerala Moru.
- Store in the refrigerator for up to 2 days; shake well before using as it may settle.
- Add a pinch of roasted cumin powder if you prefer an extra layer of earthiness.
Serve with
Serve with boiled Matta rice, a vegetable stir-fry (Thorans), and a spicy pickle.

Crush the ginger and green chilies with a mortar and pestle rather than chopping to release maximum juice.
