Potlakaya Verusenaga Kura
Snake gourd stir-fry finished with a coarse roasted peanut powder.

A humble and beloved stir-fry from the coastal and inland regions of the Telugu states. Potlakaya (snake gourd) is a high-moisture vegetable that is transformed by the addition of 'Verusenaga Papu' (roasted peanuts). This dish is prized for its contrast between the soft, succulent gourd and the crunchy, nutty, spiced peanut crumble.
Ingredients
The Vegetable
- 500g Snake gourd (Potlakaya), scraped and finely chopped
- 1/2 tsp Salt (for sweating the gourd)
- 1/2 tsp Turmeric powder
The Peanut Spice Mix
- 1/2 cup Peanuts, dry roasted
- 4-5 Dry red chilies
- 2 cloves Garlic
- 1 tsp Cumin seeds
Tempering
- 2 tbsp Peanut oil
- 1 tsp Urad dal (split black gram)
- 1 tsp Mustard seeds
- 1/4 tsp Hing (Asafoetida)
- 2 sprigs Curry leaves

Prep the snake gourd
Lightly scrape the outer skin of the snake gourd. Slice it vertically, remove the pith and seeds, and chop into thin half-moons. Toss with a pinch of salt and let sit for 10 minutes.

Squeeze excess water
After 10 minutes, squeeze the chopped gourd firmly between your palms to remove excess moisture. This ensures the stir-fry doesn't become soggy.

Make the peanut powder
In a small pan, roast the red chilies and cumin. Pulse them in a grinder with the roasted peanuts and garlic until you get a coarse, sandy powder. Do not over-process into a paste.

Sizzle the tempering
Heat oil in a wide frying pan. Add mustard seeds, urad dal, and curry leaves. Fry until the urad dal turns golden brown and nutty.

Sauté the gourd
Add the squeezed snake gourd and turmeric to the pan. Sauté on medium-high heat for 8-10 minutes. The gourd should cook in its own remaining juices and turn tender but stay green.

Add the spice mix
Once the vegetable is cooked through, sprinkle the coarse peanut powder over it. Stir well to coat every piece of the gourd.

Final crisping
Cook for another 3-4 minutes on low heat, allowing the peanut powder to toast slightly and adhere to the vegetable. The mixture should be dry and crumbly.

Adjust seasoning
Taste for salt. The peanuts and gourd both need salt, but remember you added some during the sweating process.
Notes & variations
- Select tender snake gourds; older ones can be fibrous and have bitter seeds.
- The peanut powder can be made in bulk and stored for other dry vegetable stir-fries.
- For a vegan variation, ensure no ghee is used in the tempering (peanut oil is traditional).
- If you like it spicy, increase the number of dry red chilies in the peanut mix.
Serve with
Perfect as a side dish with Pappu (dal) and steamed rice.

Squeezing the water out of the gourd is the secret to preventing a mushy texture.
