Spicy, deep-fried prawns originating from the Koli fishing community.

Prawns Koliwada is a legendary Mumbai appetizer created by the Koli (fisherfolk) community, specifically attributed to the Sion Koliwada area. It is characterized by its bright red hue and a batter that is crispy on the outside while the prawn remains succulent inside. Unlike other fried seafood, this dish uses a double-marination technique and a signature touch of carom seeds to aid digestion and add a thymol-like aroma.
Ingredients
First Marination
- 500g Tiger Prawns, deveined and cleaned (tails on)
- 1 tbsp Ginger-garlic paste
- 1 tsp Kashmiri red chili powder
- 1/2 tsp Turmeric powder
- 1 tbsp Lemon juice
- 1/2 tsp Salt
Second Marination & Batter
- 4 tbsp Besan (Gram flour)
- 2 tbsp Rice flour (for crunch)
- 1 tbsp Cornstarch
- 2 tsp Ajwain (Carom seeds), crushed
- 1 tsp Garam masala
- 1/2 tsp Black salt (Kala namak)
- 1 Egg white (optional, for binding)
- Oil for deep frying

First Marination
In a glass bowl, toss the cleaned prawns with lemon juice, ginger-garlic paste, turmeric, and chili powder. Massage the spices into the prawns gently and set aside for 15-20 minutes. This ensures the acid breaks down the fibers and the flavor penetrates to the core.

Prepare the Dry Mix
In a separate plate, whisk together besan, rice flour, cornstarch, ajwain, and garam masala. The ajwain should be rubbed between your palms before adding to release its essential oils, which is the hallmark of Koliwada style.

Coat the Prawns
Add the marinated prawns (along with any juices) into the dry flour mix. Add the egg white if using. Mix by hand until a thick, pasty coating forms around each prawn; do not add water unless the batter is too dry to stick.

Heat the Oil
Heat vegetable oil in a deep pan to 180°C (350°F). Test by dropping a small bit of batter; if it rises immediately with bubbles, the oil is ready. Do not crowd the pan, as this lowers the temperature and leads to oily prawns.

First Fry
Carefully drop prawns one by one into the hot oil. Fry for 2 minutes until the coating sets and turns a light golden orange. Remove with a slotted spoon and drain on paper towels.

Resting Period
Let the prawns rest for 3 minutes. This allows the internal moisture to redistribute, preventing the crust from becoming soggy after the final fry.

Flash Fry for Crunch
Increase the heat to high until the oil is slightly smoking. Drop the semi-fried prawns back in for 30-45 seconds. This 'flash fry' creates the signature shatteringly crisp exterior without overcooking the delicate meat.

Drain and Season
Remove the prawns quickly and drain. While still hot, sprinkle a pinch of chaat masala or black salt over them to enhance the tanginess.
Notes & variations
- Ensure prawns are patted dry before the first marination to prevent the batter from becoming runny.
- Replace egg white with a splash of chilled soda water for a lighter, tempura-like crust.
- Do not use food coloring; high-quality Kashmiri chili powder gives the authentic red color safely.
- Leftovers can be reheated in an air fryer at 200°C for 3 minutes to regain crispness.

Serve with sliced red onions, lemon wedges, and a spicy mint-coriander chutney.
