Sabudana Khichdi
A popular fasting dish made from pearls of sago, peanuts, and chilies.

Sabudana Khichdi is a breakfast staple and the primary dish for 'vrat' (fasting) in Maharashtra. It relies on the interplay between the chewy, translucent sago pearls and the crunchy, nutty texture of roasted peanuts. Perfecting the khichdi is considered a skill in Mumbai households, as the pearls must remain separate and fluffy rather than clumping into a sticky mass.
Ingredients
Sago Preparation
- 200g (1 cup) Sabudana (Sago/Tapioca pearls)
- 180 ml (3/4 cup) Water for soaking
- 1/2 tsp Salt
- 1 tsp Sugar
Peanut Mixture
- 75g (1/2 cup) Raw peanuts
- 2-3 Green chilies, finely chopped
The Tempering
- 2 tbsp Peanut oil or Ghee
- 1 tsp Cumin seeds
- 1 medium Potato, peeled and diced very small
- 8-10 Curry leaves
- 2 tbsp Fresh coriander, chopped
- 1/2 Lemon, juiced

Washing the Sabudana
Rinse the sabudana under cold running water 3-4 times to wash away excess starch. This is the most critical step to prevent stickiness; keep rinsing until the water runs clear.

The Perfect Soak
Place the rinsed pearls in a wide bowl and add exactly 3/4 cup of water. The water should be just level with the pearls. Cover and let it soak for 6-8 hours or overnight.

Checking the Pearls
Test the soak by pressing a pearl between your thumb and forefinger. It should mash completely with no hard center. If hard, sprinkle a little water and wait another hour.

Preparing Peanuts
Dry roast the peanuts in a pan until the skins darken and they become fragrant. Cool, peel off the skins, and crush them in a mortar and pestle to a coarse powder (not a fine flour).

The Mix-In
Add the crushed peanuts, salt, and sugar directly to the soaked sabudana pearls in the bowl. Toss gently with a spoon so every pearl is coated in peanut dust. This acts as a barrier against sticking.

Sautéing Potatoes
Heat oil/ghee in a heavy-bottomed pan. Add cumin seeds and let them splutter. Add the diced potatoes and a pinch of salt. Cover and cook on low heat for 5-7 minutes until the potatoes are golden and tender.

Tempering the Aromatics
Add the curry leaves and chopped green chilies to the potatoes. Sauté for 30 seconds until the chilies are fragrant and slightly blistered.

The Final Toss
Add the sabudana-peanut mixture to the pan. Increase the heat to medium-low and stir gently but continuously for 3-5 minutes. The pearls will turn from opaque white to translucent.

Finishing the Dish
Once the pearls are translucent and soft, turn off the heat immediately. Overcooking will make them rubbery. Stir in the lemon juice and half of the coriander.

Resting
Cover the pan for 2 minutes off the heat. This allows the steam to finish the centers of the pearls without drying out the exterior.
Notes & variations
- Never use too much water for soaking; the ratio of 1:0.75 is the golden rule.
- Peanut oil is preferred for its high smoke point and complementary flavor.
- For non-fasting days, you can add a pinch of turmeric for a yellow hue.
- If the khichdi gets dry, sprinkle a few drops of water and cover for a minute.
Serve with
A side of chilled sweetened yogurt or a spicy peanut garnish.
Cook's note
Always use a non-stick or well-seasoned cast iron pan to prevent the starchy pearls from bonding to the bottom.
