Originating from the agricultural heartland of Thanjavur, this dish is a rustic tavern-style preparation traditionally made with country chicken (nattu kozhi). The name 'Pichu Potta' literally translates to 'shredded', which allows the meat to absorb the pungent heat of the black pepper and the sweetness of the shallots more effectively. It is a prized side dish often served during celebratory lunches to complement a mild sambar or rasam.

Ingredients

For Cooking Chicken

  • 500g chicken thighs, bone-in
  • 1/2 tsp turmeric powder
  • 1/2 tsp salt
  • 1 cup water

The Tempering and Sauté

  • 3 tbsp gingelly (sesame) oil
  • 1/2 tsp fennel seeds (soambu)
  • 200g small onions (shallots), thinly sliced
  • 2 sprigs fresh curry leaves
  • 3-4 dried red chilies, broken
  • 1 tbsp ginger-garlic paste

Spices

  • 2 tbsp freshly ground black pepper (coarse)
  • 1 tsp cumin powder
  • Salt to taste

Method

    Pressure cook the chicken

    Place the chicken thighs in a pressure cooker with turmeric, salt, and 1 cup of water. Cook for 3-4 whistles until the meat is tender but not falling apart. Drain the stock (reserve for soup) and let the chicken cool until manageable by hand.

    Shred the meat

    Discard the bones and skin, then manually shred the chicken into thin strips about 2 inches long. Do not use a mixer or knife; the irregular, hand-torn edges are essential for holding onto the spice paste.

    Bloom the aromatics

    Heat gingelly oil in a heavy-bottomed iron kadai over medium heat until it shimmers. Add fennel seeds and let them sizzle for 10 seconds, then toss in the dried red chilies and curry leaves until the leaves become crisp.

    Caramelize the shallots

    Add the sliced small onions and sauté for 8-10 minutes. The goal is to reach a deep golden brown color, which provides the necessary sweetness to balance the heavy pepper heat.

    Sauté ginger-garlic

    Stir in the ginger-garlic paste and cook for 2 minutes until the raw smell disappears. Ensure the heat is medium-low so the paste doesn't stick or burn to the bottom of the pan.

    Add shredded chicken

    Increase the heat to medium-high and add the shredded chicken to the pan. Toss vigorously for 5 minutes so the chicken pieces get slightly crispy on the edges from the hot oil.

    Season with spices

    Lower the heat and add the cumin powder and the coarsely ground black pepper. Adjust salt as needed, keeping in mind that the chicken was cooked with salt initially.

    The final roast

    Stir-fry the chicken for another 5-7 minutes on low heat. The pepper should coat the meat entirely, and the mixture should look dark brown and semi-dry.

    Garnish and rest

    Add a final sprig of fresh curry leaves and a teaspoon of raw gingelly oil. Turn off the heat and cover the pan for 2 minutes to let the flavors meld before serving.

Notes & variations

  • Use whole black peppercorns and crush them just before adding for maximum potency.
  • Gingelly oil is traditional and provides a unique nutty flavor that cannot be replicated with vegetable oil.
  • If using broiler chicken, reduce pressure cooking time to 2 whistles.
  • Small onions are mandatory; large red onions lack the specific sweetness required for this dish.

Serve with

Hot steamed rice, Thanjavur-style Arachuvitta Sambar, and a dollop of ghee.

Roast the peppercorns slightly before grinding to intensify the floral notes and reduce raw pungency.
