About this dish

Often called 'Kozhi Porichathu' in the capital city, this dish is famous for its distinct crunch and the heavy use of fennel seeds. Unlike the Malabar version, the Thiruvananthapuram style involves a thick, coarse marinade that forms a crust around the meat. It is a staple at local 'thattukadas' (street-side eateries) and is known for its vibrant red color and aromatic punch.

Ingredients

The Marinade

  • 500g Chicken (small pieces, skinless)
  • 2 tbsp Kashmiri chili powder
  • 1/2 tsp Turmeric powder
  • 1.5 tbsp Fennel seeds (coarsely crushed)
  • 1 tbsp Ginger-garlic paste
  • 1 tbsp Rice flour
  • 1 tbsp Lemon juice
  • 1 tsp Salt

For Frying

  • 1 cup Coconut oil
  • 3 sprigs Curry leaves
  • 4 Green chilies (slit)
  • 6 Garlic cloves (crushed with skin on)

Method

    Marinate the Chicken

    In a large bowl, mix the chicken with chili powder, turmeric, crushed fennel, ginger-garlic paste, salt, and lemon juice. Massage the spices into the meat and let it rest for at least 30 minutes (preferably 2 hours in the fridge).

    Add the Crunch Factor

    Just before frying, sprinkle the rice flour over the marinated chicken and toss. The flour absorbs excess moisture and ensures a crispy exterior.

    Heat the Oil

    Heat coconut oil in a deep frying pan (kadai) over medium-high heat. To test, drop a small piece of marinade; it should sizzle and rise to the surface immediately.

    First Batch

    Carefully slide chicken pieces into the oil in batches. Do not overcrowd the pan, as this lowers the oil temperature and leads to soggy chicken.

    Fry the Aromatics

    While the chicken is frying, toss in a handful of curry leaves and the crushed garlic cloves with their skin on. These will infuse the oil and become crispy garnishes.

    Initial Cook

    Let the chicken fry undisturbed for 3-4 minutes to allow the crust to set. If you flip too early, the marinade will peel off.

    Flip and Crisp

    Turn the pieces over and cook for another 5-6 minutes. The chicken should turn a dark, rustic red and the exterior should feel firm and crisp.

    Drain and Rest

    Use a slotted spoon to remove the chicken, garlic, and curry leaves. Drain on paper towels for 2 minutes. Resting allows the internal juices to redistribute.

    Garnish

    Top with the fried curry leaves and garlic. The garlic skin becomes paper-thin and crunchy, providing an excellent textural contrast.

Notes & variations

  • Coarsely crushing the fennel seeds is better than using a fine powder for that signature 'street-style' taste.
  • Coconut oil is non-negotiable for the authentic Kerala flavor profile.
  • Kashmiri chili powder gives the red color without making it unbearably hot.
  • You can add a teaspoon of soy sauce to the marinade for a modern umami twist, though not traditional.

Serve with

Serve with sliced red onions, lemon wedges, and Porotta or layered flatbread.

Cook's note

Fry the garlic cloves with their skins on; it prevents the garlic from burning and creates a delicious, buttery interior.
