About this dish

A staple in Delhi households during the chilly months of November to February, Mooli ka Achar is an 'instant' pickle. Unlike sun-dried pickles that take weeks, this is prepared and eaten within days. It provides a sharp, crunchy, and pungent contrast to the heavy, buttery paranthas favored in Dilli breakfast culture.

  • 500g White Radish (Mooli), peeled and cut into 2-inch batons
  • 2 tbsp Salt
  • 2 Green chilies, slit lengthwise
  • 1-inch Ginger, julienned

Pickling Spices

  • 3 tbsp Yellow Mustard seeds (Rai), coarsely ground
  • 1 tsp Turmeric powder
  • 1 tsp Red chili powder
  • 1/4 tsp Hing (Asafoetida)
  • 4 tbsp Mustard oil

Method

    Sweat the radish

    Toss the radish batons with 1 tablespoon of salt and let them sit in a colander for 30 minutes. This draws out the excess moisture, ensuring the pickle stays crunchy and doesn't become watery.

    Dry the pieces

    Pat the radish pieces completely dry using a clean kitchen towel. Any residual water will significantly shorten the shelf life of the pickle.

    Prepare the spice mix

    In a large glass bowl, combine the ground mustard seeds, turmeric, red chili powder, and the remaining salt.

    Heat the oil

    Heat the mustard oil in a small pan until it reaches its smoking point. Turn off the heat and let it cool for 2 minutes so it doesn't burn the spices.

    Temper the spices

    Add the hing to the warm oil, then pour the oil directly over the dry spice mix in the bowl. It should sizzle slightly and release a nutty aroma.

    Combine

    Add the dried radish, ginger juliennes, and green chilies to the spiced oil. Toss thoroughly with a wooden spoon until every piece is coated.

    Macerate

    Transfer the mixture to a sterilized glass jar. While it can be eaten immediately, the flavors develop best if left in a sunny spot for 24 hours.

    Fermentation check

    After a day, the mustard seeds will begin to ferment, giving the pickle its characteristic 'kick' and sourness.

    Storage

    Keep the jar at room temperature for 3 days to develop tang, then move to the refrigerator to maintain crunch.

Notes & variations

  • Yellow mustard seeds (Peelee Rai) are preferred over black ones for a cleaner, sharper tang.
  • You can add cauliflower florets or carrot batons to make it a 'Gajar Mooli' mixed pickle.
  • Always use a dry spoon to take the pickle out of the jar.
  • If you like it extra sour, add a teaspoon of Amchur (dry mango powder) or a squeeze of lemon.

Serve with

Aloo Paranthas or Gobhi Paranthas with a dollop of white butter.

Cook's note

Don't discard the tender green leaves of the radish; chop a few into the pickle for extra peppery flavor.
