About this dish

Begun Bhaja is perhaps the most beloved accompaniment in a Bengali meal. Whether it is served with Khichuri on a rainy day or alongside Luchi for breakfast, these thick slices of eggplant are transformed by mustard oil into something creamy and decadent. A true Begun Bhaja must be charred on the outside and buttery on the inside.

Ingredients

The Main Ingredient

  • 1 large eggplant (Bharta variety), cut into 1/2 inch thick rounds
  • 1 tsp turmeric powder
  • 1 tsp salt
  • 1/2 tsp red chili powder
  • 1 tsp rice flour (optional, for extra crispness)
  • 1/2 tsp sugar

For Frying

  • 4 tbsp mustard oil (pure, cold-pressed)

Method

    Slicing the Eggplant

    Wash the eggplant and pat it dry. Slice it into thick rounds (about 1.5 cm). Thick slices are essential; thin ones will shrivel up and lose their creamy center during frying.

    The Dry Rub

    In a small bowl, mix turmeric, salt, chili powder, and sugar. Rub this mixture generously on both sides of each eggplant slice. Let them marinate for 5-10 minutes; the salt will draw out some moisture, helping the spices stick.

    Heating the Pan

    Heat a heavy cast-iron skillet or non-stick pan. Add mustard oil and heat it until it just begins to smoke, then turn the heat down to medium. Mustard oil provides the authentic pungent aroma.

    Initial Searing

    Place the eggplant slices in the pan in a single layer. Do not overcrowd. Sear on medium heat for 3-4 minutes. The eggplant will act like a sponge and soak up the oil; this is normal.

    Flipping for Color

    Once the underside is dark golden brown and slightly charred, flip the slices carefully using a flat spatula. The spice crust should be visible and fragrant.

    Slow Softening

    Reduce the heat to low-medium. Cover the pan with a lid for 2 minutes. This creates a little steam which ensures the interior of the eggplant becomes completely soft and custard-like.

    Final Crisp

    Remove the lid and increase the heat to high for the last 30 seconds. This ensures the exterior stays crisp while the inside remains molten. Drain briefly on paper towels to remove excess oil.

Notes & variations

  • Choose an eggplant that feels light for its size; heavy ones have too many seeds which can be bitter.
  • The pinch of sugar is a secret Bengali trick to help the eggplant caramelize beautifully.
  • If you prefer a thicker crust, you can dust the slices with a little besan (gram flour) before frying.
  • Always use mustard oil; vegetable oil lacks the necessary depth of flavor for this dish.

Serve with

Essential with Bhuna Khichuri or as a side to Dal and Rice.

Cook's note

Do not add more oil midway; if the pan looks dry, the eggplant will eventually release some of the oil it absorbed back into the pan.
