Gondhoraj Maach is a contemporary Bengali classic that celebrates the 'Gondhoraj Lebu' (King of Lemons), a lime variety known for its intense, kaffir-like aroma rather than its juice. Unlike heavy mustard-based fish curries, this dish is light, fragrant, and citrus-forward. It is particularly popular in summer months when the refreshing scent of the lime can revive a flagging appetite.

Ingredients

Fish and Marinade

  • 4 pieces Rohu or Katla fish steaks (approx. 400g)
  • 1 tsp Turmeric powder
  • 1 tsp Salt
  • 1 tbsp Gondhoraj lemon juice

The Gravy Base

  • 3 tbsp Mustard oil
  • 2 tbsp Thick yogurt (whisked)
  • 1 tbsp Cashew or Poppy seed paste
  • 1 tsp Ginger paste
  • 4-5 Green chilies, slit
  • 1 tsp Sugar
  • 2 Gondhoraj lemon leaves
  • 2 thick slices of Gondhoraj lemon for garnish

Method

    Marinate the fish

    Coat the fish steaks with salt, turmeric, and a teaspoon of lemon juice. Let them sit for 15 minutes; this helps firm up the flesh and removes any muddy odors.

    Flash fry the fish

    Heat mustard oil in a pan until smoking. Lightly fry the fish steaks for 2 minutes per side—they should be pale gold, not deep brown, to keep the texture succulent.

    Prepare the yogurt mix

    In a bowl, whisk the yogurt with the cashew paste, ginger paste, and a pinch of turmeric. Adding the nut paste prevents the yogurt from curdling when it hits the heat.

    Temper the aromatics

    In the same oil used for fish, add the slit green chilies. Wait for them to blister slightly, releasing their heat into the oil.

    Cook the base

    Lower the heat to minimum and pour in the yogurt mixture. Stir constantly for 3-4 minutes until the oil begins to streak on the surface.

    Simmer the sauce

    Add half a cup of warm water, salt, and sugar. Bring the gravy to a gentle simmer on medium-low heat until it reaches a creamy consistency.

    Poach the fish

    Carefully slide the fried fish steaks into the simmering gravy. Cover and cook for 5-6 minutes, allowing the fish to absorb the flavors without breaking.

    Infuse the citrus

    Tear the Gondhoraj leaves slightly to release oils and drop them into the pan. Add one teaspoon of fresh Gondhoraj juice, then immediately turn off the heat.

    The critical rest

    Cover the pan tightly and let it sit for 5 minutes. This 'steeping' method is crucial as boiling the lemon juice or leaves for too long will make the gravy bitter.

Notes & variations

  • If Gondhoraj lemon is unavailable, use Kaffir lime zest and juice as a substitute.
  • Ensure the yogurt is at room temperature before adding to the pan to avoid splitting.
  • The gravy should be pale yellow and silky, not thick like a korma.
  • Avoid over-frying the fish; the delicacy of the lemon flavor requires tender, soft fish.

Serve with steaming hot Basmati rice to best appreciate the aroma.

Cook's note

Never boil the gravy after adding the lemon juice; the heat will turn the citric acid bitter.
