Macher Jhol with Alu Phulkopi
Light fish stew with potatoes and cauliflower, a winter specialty.

This light and comforting fish stew is the heartbeat of a Bengali winter. It features seasonal cauliflower and potatoes, simmered with fresh river fish like Rohu or Catla. Unlike the heavy curries of the North, this 'Jhol' is thin, flavorful, and focuses on the natural sweetness of the vegetables and the freshness of the fish.
Ingredients
The Fish
- 4 Steaks of Rohu or Catla fish
- 1 tsp Turmeric powder
- 1 tsp Salt
- Mustard oil for frying
Vegetables
- 1 Medium cauliflower, cut into medium florets
- 2 Medium potatoes, peeled and cut into long wedges
- 2 Green chilies, slit
Spices and Liquid
- 1 tsp Cumin seeds
- 1 Bay leaf
- 1 tbsp Ginger paste
- 1 tsp Cumin powder
- 1 tsp Turmeric powder
- 500ml (2 cups) Warm water
- Fresh coriander for garnish

Marinating the Fish
Wash the fish steaks and pat them dry. Rub thoroughly with 1/2 tsp salt and 1/2 tsp turmeric. Let them marinate for 15 minutes to firm up the flesh.

Frying the Fish
Heat mustard oil in a pan until it smokes. Gently slide in the fish pieces and fry for 3 minutes on each side until golden brown. Do not over-fry, or the fish will become rubbery. Remove and set aside.

Searing the Vegetables
In the same oil, fry the cauliflower florets until the edges are browned (about 4 minutes). Remove, then fry the potato wedges until they develop a light crust. Remove and set aside.

Tempering the Base
If needed, add another tablespoon of oil. Add cumin seeds and the bay leaf. Once the seeds crackle, add the ginger paste and a splash of water.

Blooming the Spices
Mix the remaining turmeric and cumin powder with a little water to form a paste. Add this to the pan and sauté for 2 minutes until the oil starts to separate.

The Stewing Process
Add the fried potatoes and cauliflower back to the pan. Toss with the spices for 1 minute. Pour in the warm water and add salt. Bring to a boil.

Simmering the Veggies
Cover the pan and simmer on medium heat for 8-10 minutes until the potatoes and cauliflower are 90% cooked. Check by piercing a potato with a knife.

Integrating the Fish
Gently place the fried fish steaks into the simmering broth. Add the slit green chilies. Cover and cook for another 4-5 minutes so the fish absorbs the flavors.

Finishing the Jhol
Check the consistency; it should be a thin stew. Garnish with a generous handful of chopped fresh coriander. Turn off the heat and let it sit for 2 minutes.
Notes & variations
- Ensure the cauliflower florets are not cut too small, or they will disintegrate into the gravy.
- Using warm water instead of cold water keeps the fish tender and prevents the cooking process from stalling.
- You can add a small chopped tomato during the spice-sautéing stage for a bit of tang.
- This dish is best eaten fresh but can be refrigerated for 24 hours; the flavors often deepen.

Serve with piping hot steamed white rice and a wedge of lime.

Fry the fish in very hot mustard oil to ensure it doesn't stick to the pan and develops a proper crust.
