Mouri Maach
A cooling fish curry flavored with fennel seeds.

Mouri Maach is a unique, light fish curry from Bengal that highlights the refreshing flavor of fennel seeds (Mouri). It is an quintessential summer dish, prized for its digestive properties and its ability to provide a 'thanda' (cooling) effect on the body. Unlike the fiery red curries of the region, this dish is usually pale yellow or green, focusing on aromatic herbals rather than heat.
Ingredients
Fish and Marinade
- 500g Fresh water fish (Rohu, Mrigal or Tilapia), sliced
- 1/2 tsp Turmeric powder
- 1/2 tsp Salt
- Mustard oil for frying
The Mouri Paste
- 2 tbsp Fennel seeds (Mouri), soaked and ground to a fine paste
- 1 tsp Ginger paste
- 2-3 Green chillies, slit
Gravy Elements
- 1/2 tsp Nigella seeds (Kalo Jeera) for tempering
- 1/2 tsp Turmeric powder
- Salt to taste
- 1 cup Warm water

Fish Prep
Marinate the cleaned fish pieces with salt and turmeric. Let them sit for 10 minutes to draw out excess moisture and season the flesh.

Flash Fry
Heat mustard oil in a wok until it reaches smoking point. Fry the fish pieces until they are just golden on the outside but still moist inside, then set them aside.

Temper the oil
In the remaining oil, add the nigella seeds and green chillies. The seeds should sizzle and release a nutty, peppery aroma within seconds.

Prepare Fennel Slurry
Mix the fennel seed paste with ginger paste, turmeric, and a little water to make a thin slurry. This prevents the delicate fennel from burning when added to the oil.

Sauté the paste
Pour the slurry into the pan. Cook on low heat for 2-3 minutes until the water evaporates and you see oil bubbles appearing around the paste.

Build the broth
Add a cup of warm water and salt to the pan. Bring the mixture to a gentle boil, allowing the fennel flavor to fully infuse into the liquid.

Simmer the fish
Slide the fried fish pieces into the boiling broth. Reduce the heat to medium-low and let it simmer for 5 minutes without a lid.

Final consistency
The gravy for Mouri Maach should be thin and soupy (jhol). If it has thickened too much, add a splash of water and bring it back to a simmer.

Resting
Turn off the heat and let the curry rest for 5 minutes. This 'resting' period is vital for the fennel's sweetness to penetrate the fish.
Notes & variations
- Soak the fennel seeds in warm water for 20 minutes before grinding to get a smoother paste.
- Use a high-quality mustard oil for the authentic 'jhal' (pungency) that balances the sweet fennel.
- You can add a few potato wedges (fried beforehand) to the curry for extra body.
- Tilapia or Catfish work excellently if traditional Carp is unavailable.

Perfectly paired with steamed parboiled rice (Sheddo Chal).

Do not use Garam Masala in this dish; it will overpower the delicate and cooling aroma of the fennel.
